Using a butter knife spread the garlic over the toast. Squeeze the garlic cloves out of its skin and spread it on top of the toast. Spread the ricotta-pesto over the toast. Add tomato confit on top of the toast (amount is to your liking). Season with black pepper, chili flakes and top with microgreens (optional).
What about the part with the 400 garlic cloves in a pot with oil? I don't see that in the recipe. You were just infusing your olive oil with garlic, is that right?

It works, it just takes forever. A molcajete is also a small to medium sized bowl made out of rock, usually igneous, that has a rough texture on the inside, so grinding actually accomplishes something.
