Chef Atul's Chickpea Biryani & Apple-Mint Raita

  • Chickpeas Biryani & Apple-Mint Raita
    Ingredients
    220 gm basmati rice, washed and soaked, boiled
    200 gm cooked chickpeas
    100 gm cooked black chickpeas (Kala Chana)
    2 tbsp Vegetable oil
    1 black cinnamon
    4 green cardamoms
    2 tsp. cumin seeds
    1” cinnamon stick
    4 cloves
    2 bay leaves
    ½ tsp black pepper
    2 medium onions, thinly sliced
    6 garlic cloves, sliced
    ½ tsp turmeric powder
    1 tsp mild red chili powder
    4 tsp coriander powder
    1 tsp garam masala powder
    1 tbsp. fenugreek leaves
    5 medium tomatoes, blended
    300 ml water
    4 tbsp. chopped coriander leaves
    2 tbsp. chopped ginger
    100 gm baby spinach leaves
    50 gm pomegranate seeds (optional)
    Apple Raita
    300 gm plain yoghurt
    1 tsp cumin seeds, toasted, powdered
    1 tbsp. chopped mint leaves
    1 no green apple, chopped
    Salt to taste
    Method
    Heat oil in a wok, saute’ cinnamon, cumin, cardamoms, cloves, bay leaves & black pepper. Add sliced onions, 1 tsp of salt and cook until onions is fried until light brown in colour. Add garlic and sauté to sweat the garlic. Add all the powdered spices, fenugreek leaves and blended tomatoes. Add the white and black chickpeas, water and simmer for 10-12 minutes.
    Add chopped coriander and ginger.
    In a separate pan, make a layer of chickpeas, cover with spinach leaves and cover spinach leaves with a layer of rice. Repeat this process to make another layer. Cover with a wet kitchen towel and drizzle little warm water and place the lid. Keep it on stove at minimum heat setting for 5-7 minutes to allow the flavours to mix in well with rice.
    Make apple raita with by mixing all the ingredients together.
    Remove the wet towel from the top of the biriyani and serve while its still hot with raita.

    I love watching your channel. I have only tried the lamb an IKEA so far. This one looks amazing.
    I notice in the 8 videos that I have watched that you don't use ghee. Is that a personal preference? I use it in a few recipes because it's got a great taste.

    looks fantastic chef. such an easy method to make a vegetarian biriyani! i made one a few weeks back layering cauliflower and potatoes from your panchphor recipe. adding spinach is a great idea...may try with arugula!

    Can I substitute the black chickpeas with white? and what is a good substitution for the fenugreek leaves?

      No substitute for fenugreek leaves. Its has unique aroma. But its an addon. Your dish would not be much affected without it.

    Atul you did not explain after layer the bryani how high should be the flame and to put the bryani the rice should be 70% cooked at least and which rice should be used

    Without ghee, rose water and screw pine water it's not biriyani at all....... And finally it's not biriyani if we don't use saffron in it
