How To Bottle Hot Sauce

  • Today I will try out a new hot sauce recipe and show you how I bottle it up. After making this recipe I think it is more of a hot vinegar and on a scale from 1 - 10 this is probably a 4 in the heat department. I used smoked dried ghost peppers per the recipe but I think next time I would use fresh. Then I think the heat would be more of what I was looking for. However the flavor is great!!     Roasted Garlic Ghost Pepper Hot Sauce/Vinegar-
    2 Qts. Apple Cider Vinegar
    2 heads of Roasted Garlic
    10-15 smoked dried Ghost Peppers
    1/2 C. Salt
    1 C. Sugar

    I know it souds like you cant use plastic bottles but can you use that same technique to sterilize them w.o boiling Temps. Would they warp to. They did in water for me . ?

    Thank you, this was great. If the shrink wrap drops below the cap or melts around the seal, should I remove the seal and redo it? I believe the idea is to have the bottle and cap completely covered by the seal? Thank you!

    Hey so I'm curious about whether or not hot sauce needs to be burped? I'm worried about something and it exploding in my fridge or pantry etc I've heard some sauce needs to be and others don't whats the difference?

    If you bottle it like this, will it not have lot's of air in it and make it go off quick? Maybe dumb question, I never bottles before, always use jars and heat them when closing, so they get a vacuum inside

      You can boil bath the bottles if you want to but this recipe is very acidic so it’s really not needed. But of course do what you think is best for your family.

      Once opened I keep it in the fridge and it lasts at least 6 months
