ALOO BHUNA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Aloo Bhuna
1 ½ tbsp Oil, तेल
1 Bay leaf, तेजपत्ता
8-9 Black peppercorns, काली मिर्च के दाने
1 Green cardamom, हरी इलायची
3 medium Onions, chopped, प्याज
1 tsp Coriander powder, धनिया पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
1 ½ tsp Ghee, घी
2 medium Tomato, finely chopped, टमाटर
2 tbsp Curd, beaten, दही
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
700 gms Baby potatoes (peeled & cut into half) छोटे आलू
½ cup Water, पानी
Prepared Gram Flour Mixture, बेसन का तैयार मिश्रण
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Masala
Salt to taste, नमक स्वादअनुसार
1 tsp Cumin seeds, जीरा
1 ½ tbsp Coriander seeds, धनिया के बीज
1 tbsp Black peppercorns, काली मिर्च के दाने
2 Black cardamom, बड़ी इलायची
6-7 Green cardamom, हरी इलायची
6-7 Cloves, लौंग
4-5 Dry kashmiri red chilies, सूखी कश्मीरी लाल मिर्च
For Gram Flour Mixture
1 ½ tbsp Ghee, घी
2 Green chillies, slit into half, हरी मिर्च
1 ½ tbsp Gram flour, बेसन
¼ tsp Carom seeds, अजवाइन
1 ½ tsp Prepared Masala, तयार किया हुआ मसाला
For Garnish
Coriander sprig, धनिया पत्ता
Chili oil, मिर्च का तेल
Process
For Aloo Bhuna
In a deep heavy handi or pan, add oil, once it's hot, add bay leaf, black peppercorns, green cardamom let it splutter.
Add onion and saute until light brown in color.
Add coriander powder, turmeric powder and saute for a minute.
Add ghee, tomato and cook for 2-3 minutes.
Add curd, degi red chili powder, salt to taste and mix well.
Add baby potatoes, water and mix it well.
Cover it with the lid and cook for 8-10 minutes.
Onces the potatoes are 80% cooked, add prepared gram flour mixture to thicken the gravy.
Finish it with some coriander leaves and transfer it to a serving bowl,
Garnish it with coriander sprig and chili oil.
Serve hot with roti.
For Masala
In a pan, add salt to taste, cumin seeds, coriander seeds, black peppercorns, black cardamom, green cardamom, cloves, dry kashmiri red chillies and dry roast it on medium flame or until the spices turn fragrant.
Transfer it into a grinder jar and grind into a fine powder.
Keep aside for further use.
For Gram Flour Mixture
In a pan, add ghee, once it's hot, add green chillies, gram flour and saute until the rawness is gone.
Add carom seeds, prepared masala and mix well.
Turn off the flame and keep aside for further use.

I tried it today for dinner it came out yumm… with few changes, I made it without onions as it’s Kartik Mahina (month).. added saunf 1/2 tsp saunf in the masala n also used 2 spoons cream to finish… thanks for this easy n amazing recipe ❤

In Bengal, we call it "Aloor Dom" or "Dom Aloo" except we don't add besan and use ginger paste.. It tastes good with rice or paratha😍😋

Hey chef 👨🍳... I love your videos and the way you explain everything is just awesome 👌. Can you please make a series of simple recipes for students or international students. Recipes like these which need alot of masalaas is just difficult to make. I live in Australia and Indian grocery is very expensive( especially khade masaale). But we also don't want to make same recipes again and again. If you can think about it that would be great.

This is a unique and amazing recipe. When I first went through the video it sounded very complicated. I had to gather courage for two weeks to finally attempt it on Sunday.
