Homemade Red Wine using black grapes (without yeast) | You and I Can Cook

  • This homemade red wine is prepared using black grapes without adding yeast. It's sweet, smooth, supple and the flavor lingers in your mouth for quite some time after drinking.
    The right measure for a sweet wine is
    1 kg black grapes + 1 kg sugar + 50 g whole wheat (helps in fermentation instead of yeast) + 2 bottles of boiled and cooled water per kg of grapes.
    Additionally you can add few cloves about 8 and a 3/4 inch piece of cinnamon too.
    For this recipe I have used
    1.5 kg of black grapes + 1.25 kg sugar + 50 g whole wheat (washed and dried before adding) + 3 bottles of boiled and cooled water (each bottle is 750 ml) , ( no yeast was added)
    * Wash the grapes thoroughly and dry them with a paper towel
    * wash the wheat and air dry it ( wheat helps in fermentation)
    * All bottles, utensils and spoons used have to be clean, thoroughly washed and dried
    * Water should be boiled and cooled before adding
    * Increase or decrease the amount of sugar according to the sweetness you need
    * Keep the wine in a dark and cool place for fermenting.
    * Once everything is added to the crushed grapes, keep it for 21 days for fermenting. Once a day stir the wine with a wooden spatula or spoon for 21 days.
    * On the 21st day strain the wine to remove the grape skins, wheat and seeds
    * Transfer the wine back to a clean bottle and strain it again on the next day by passing it through a cheesecloth and strainer to remove the remaining sediments.
    * Fill the wine into clean bottles and store in a cool dark place. When the wine matures it becomes more stronger.
    * Colour of the wine depends on the color of the grapes used.
    * Adding rum is optional, but it gives an awesome taste and punch to the wine
    * Got 5 bottles of wine from 1.5 kg grapes

    Is there little bit alcohol in wine without adding rum. Or it is just a juice and no alcohol in it plz confirm if anybody tried.

      It is alcoholic even without the rum. Adding rum increases the alcohol content and it is totally optional.
