  • Easy Sambar Recipe: Authentic South Indian Cooking
    Learn how to make delicious South Indian Sambar with this easy recipe tutorial! Whether you're a beginner or a seasoned cook, our step-by-step guide will help you master this flavorful dish.     Here's a basic recipe to make Sambar masala and Sambhar , you'll typically need the following ingredients :
    For making Sambar Masala :
    Ingredients -
    18-20 dry Red Chillies
    2 tbsp Chana daal
    1 tbspToor daa
    2 tbsp split urad daal
    2 tbsp Rice
    3 tablespoon Coriander seeds
    1 tsp Cumin seeds
    1 tsp Fenugreek seeds
    1 tbsp Mustard seeds
    10-15 Black pepper corns
    few Curry leaves
    1 tbsp Turmeric powder
    1 tbsp Asafoetida (hing)
    1 pieceTamarind
    Dry coconut ( optional)
    Instructions -
    Roast and Grind into Fine powder
    For making Sambar:
    ingredients -
    - 1 cup toor dal (split pigeon peas)
    - 2 cups mixed vegetables (such as shallots, carrots, potatoes, drumsticks, eggplant, and radish) chopped
    - 2 tomatoes, chopped
    - 2-3 green chilies, slit
    - 1 tablespoon tamarind paste
    - 1 tablespoon Sambar powder
    - 1/2 teaspoon turmeric powder
    - Salt to taste
    - Water
    - Fresh coriander leaves, chopped (for garnish)
    For Tempering:
    - 2 tablespoons oil
    - 1 teaspoon mustard seeds
    - 2-3 dry red chilies
    - A pinch of asafoetida (hing)
    - Few curry leaves
    - Jaggery powder
    Instructions-
    1. Wash the toor dal and pressure cook it with enough water until soft and mushy.
    2. In a separate pot, add the chopped vegetables, onion, tomatoes, green chilies, tamarind paste, Sambar masala , turmeric powder, and salt. Add enough water to cover the vegetables.
    3. Cook the vegetables until they are soft and cooked through.
    4. Once the vegetables are cooked, add the cooked toor dal to the pot and mix well. Adjust the consistency by adding water if needed.
    5. Simmer the Sambar for a few minutes to allow the flavors to meld together.
    6. In a small pan, heat oil for tempering. Add mustard seeds and let them splutter. Then add mustard seeds , dry red chilies, asafoetida, jaggery powder and curry leaves. Fry for a few seconds.
    7. Pour the tempering over the prepared Sambar and mix well.
    8. Garnish with fresh coriander leaves.
    9. Serve hot with steamed rice or idli/dosa.
