Festive Pineapple Slush

  • While traditionally a vintage dessert, a slush is a delicious frozen treat that needs a comeback! This pineapple slush is a super easy recipe to make and serves a large crowd! It’s perfect for any time of the year!

    INGREDIENTS⁠

    For the simple syrup:⁠

    - 6 cups water⁠
    - 3 cups sugar⁠

    For the slush:⁠

    - 3/4 cup lemon juice⁠
    - 5 tsp gelatin⁠
    - 2 qt pineapple juice⁠
    - 12 oz lemonade concentrate⁠
    - 12 oz orange juice concentrate⁠
    - 1 oz almond extract⁠
    - 1 gallon water⁠

    INSTRUCTIONS⁠

    - In a small bowl, combine the lemon juice and gelatin. Stir until smooth and set aside to bloom. During the blooming process, the gelatin will absorb the lemon juice and become thick.⁠

    - While the gelatin is blooming, in a 4-quart saucepan, combine the 6 cups of water and sugar. Bring to a simmer over medium heat. Once at a simmer, continue to stir until the water is clear and all of the sugar is dissolved. Remove from the heat and add the bloomed gelatin. Stir until the gelatin dissolves into the hot simple syrup.⁠

    - Once dissolved, add the mixture to a 12-quart container. Add the pineapple juice, lemonade concentrate, orange juice concentrate, almond extract, and water. Stir to combine, cover, and set in the freezer. Alternatively, the mixture can be poured into various small containers to freeze faster. Every 1 to 2 hours, stir the mixture.⁠

    - Once the slush is fully frozen (about 8-12 hours), remove from the freezer 30 minutes to 1 hour before serving to thaw slightly. Once the slush is easily broken up with a spoon, serve in glasses and top with lemon-lime soda.

    My grandmother made slush every Christmas and I still carry on the tradition. Except we skip the gelatin and add 2 cups of vodka before placing in the freezing. It’s such a festive treat!

    I have made this for years for weddings, showers etc...and it is SO good!! We call it Sunshine Punch and make it less the gelatin. And your right the almond flavoring is SO good!!!

    I would of never thought of all those flavors mixed together. We are having record heat for December in Louisiana and the slush looks really good! Bet that would make anyone feel good when they are in a funk. Happy New Year to you and your family.

      I'm in Louisiana too. Yes we are having summer but in a couple of days its gonna be the arctic circle

      @@brettevans9492 trust me, I know. Dropping in the 30’s and that means we won’t know what to do with ourselves. We are the most confused state, but wouldn’t change it.

    Gosh… I don’t think I’ve seen the cans of frozen juice concentrate since I was a kid, which now that I think about it, I think that was the only thing we ever had; that and the original Koolaid that was unsweetened and came in an envelope that Mom had to add cups of sugar to it.

    What can you use instead of almond Extract? I have a family member allergic to Almonds .

    Skip the almond extract and go for Amaretto.
