Japanese cutting skills - Super sharp Japanese utility knife
Chef Dai demonstrates on a humble cucumber a few simple cutting techniques.
The first technique can be used as a garnish on a place.
The second is a commonly used technique in Japan called "Katsuramuki".
And the third method can be used for salads and pickled cucumber dishes. - Jak na to + styl

It's so sharp i had to go down to 360p cause i was afraid i'd somehow cut myself watching this.
I've been cooking for 6 years now and can do that very well, but the way he does it. world class👌👍
Every time I start thinking I might not be a bad cook, I watch videos like these and realize I'm only about a million years behind great chefs when it come to skills. Sigh.
I mastered these skills at the age of ten, cooking for family of six since i was seven years old. Being the oldest means i have most responsibilities. I dont like cooking i just know how to cook extremely well. When we go out i always say you know why its better then mine. My wife says " it's because you didn't have to touch a dam pan, right" and i say "your absolutely right."
Very talented. I remember eating a sushi with a freakin thick cucumber outsider. Wasn't as refreshing(since I ate a roll of sushi with a really thin outer cucumber skin before)~This is BEAUTIFUL!

Took my kitchen knife into a professional sharpener and picked it up yesterday. For 5 bucks it was SO worth it. I look forward to cooking now because I know my prep time wont take forever because I have a good knife..

That's insanely hard. Also if you observe his pointer finger/index finger while he is thinly slicing the zucchini, you can see the blunt part of the knife really hurting him! Mad respect!

"yes" you could do all this with a new knife, provided it was a well made and properly sharpened one. Which is a rarer and rarer commodity outside of a few specialized brands :(.
I use wusthof, victrinox and Henkels kinives, they have never let me down

Sadly, no. Many knives, even new out of the box, aren't properly sharp. When trying to slice food thinly they'll either go off course from an uneven edge, or crush the food from a dull edge. Good forged knives are expensive, but usually worth it. Some forged knives, though, are poor imitations of the good ones.
Most stamped knives are junk. One exception is Victorinox Fibrox; they're moderately priced, yet very sharp and true. As word has spread their prices have gone up, but they still not (yet) outrageously priced.
One thing about most Japanese knives that helps in cutting paper-thin slices is that they are beveled on one side and flat on the other, unlike Western knives that are beveled on both sides. Most single-bevel knives work best for right-handers, but there are left-handed versions available...but they're expensive.

I've lived in Japan before and have also visited Florida before, Key West and Miami to be exact. Yes, Japan and the US are very different culturally. However, Japan also has many influences from US culture and the Japanese are extremely intrigued and interested in US culture and embrace it fully, so you will still be able to enjoy and experience much of the stuff that you're accustomed to in the US. Japanese traditions and the culture are extremely beautiful and unique IMO, so I'm sure you've have an absolutely enriching and fulfilling experience over there. Good luck!!!!

+Cooking with Chef Dai yeah, I've never heard of anyone not saying it's an amazing place, the base I'd be moving to since we're in the Navy, is apparently one of the best for the family, unlike here in florida, where it's only adult friendly. We were going to Hawaii at first but someone filled in the spot before us.
I think you will find the Japanese people and community you live in to be gracious and accommodating. Of course, Japan like every other country on this planet has its negative aspects. But I can assure you that Japan is one of the safest places to raise a family and the positives vastly outweigh the negatives. I wish you and your family the best of luck and happiness in the future!! Dai

+MiaMcc yeah really i got some cheap ass walmart knives in my kitchen that can do the same thing and they are several years old just got to sharpen them every few months on my little ceramic camping sharpener
you probably cut very softly without any pressure, which is why it lasts, because if you applied some strength to it it would probably start getting dull

What knives or knife makers do you patronize? My first proper Japanese steel was a Moritaka 270mm Gyuto, soon followed by a matching Honesuki. I picked up an inexpensive single-bevel Dexter Yanagiba and a Richmond Addict Wa-Gyuto for more traditional western use (plus it is stainless steel and easy to maintain). I know I need a proper petty, but I also want to try a Kiritsuke. What size petty do you recommend, or should I look at getting several lengths for versatility? It looks like you prefer a western handle on yours? For the price, I am tempted to get the Mac 5" for about $70, although the Misono UX-10 130mm is also attractive for not much more.
