One big reason the noses of statues are defaced in India, Egypt and Central Asia. Is because in Islam idol worship is seen as very sinful. So all the places where Muslims conquered, they would destroy the nose to deface these statues. Even in temples in India many statues do not have noses because of this.
Islam doctrine dictates that only Allah can create life. Representational art is considered an insult against God. Therefore, any images of humans must be "imperfect" so as not to offend. You see this principle in Muslim paintings by the artist intentionally leaving faces or eyes unfinished. If also is why most art in the Muslim world is non-representational, indicate geometric patterns and designs. Often quite beautiful in its own way.
