Barbecuing with......Heather Flanagan

In this video we barbecue with Heather Flanagan from, you guessed it…. Mile Marker 66. Heather has been part of MM66 since 2018. She’s a dab hand on the BBQ and cooks anything from a classic home cook meal to full on competition style food.
Today he shows us how she cooks a whole chicken with stuffing.

Brine Recipe:
4L water
1 cup table salt
1 sliced lemon
1 tablespoon peppercorns
¼ cup honey
5 bay leaves
6 garlic gloves
10 sprigs parsley, 7 sprigs thyme, 2 sprigs rosemary tied together
Stuffing recipe:
1 loaf white bread
400g softened butter
2 medium onions diced
1 large, grated carrot
1 handful of your favourite herbs
2 tablespoons all purpose rub
