  • Today I try out the Ankarsrum mixer for the very first time! I put it to the test with a double batch of my Sweet yeast Dinner roll recipe, and make a single batch of my most requested cookie recipe -Brown Buter Sourdough Chocolate Chip Cookies! So, here is my honest review of the Ankarsrum Mixer.

    After four years using the Ankarsrum, there are a few tips I'd share with a new user. The key advantage this mixer has for bread makers is that you can mix/knead with it *for as long as the dough requires* - without stressing the machine, or overheating the dough. That's such an important difference from the planetary type mixer. So if you are making a high-hydration sourdough that requires a lot of gluten development, kneading it for 25 minutes is no problem if that's what it takes to get the dough fully developed. With planetary mixers, you have to stop when the machine needs to stop - because it's overheating. Generally I find that at least 20 minutes of kneading is required to get a high-hydration sourdough batch into great shape. Most bread recipes give times based on a planetary mixer's capabilities, but with the Ank you can ignore those timings and continue until the dough is much better developed.
    You can increase the speed to get more action into the dough and cut the kneading time a bit...and again, you can't run a planetary mixer at higher speeds for very long. With the Ankarsrum, the machine doesn't raise the temperature of the dough much, so higher speeds are not a problem.
    Use the dough roller for enriched doughs (e.g. eggs and butter) and smaller batches. For larger batches and higher hydration doughs, the dough hook is better.
    You can speed up the initial mixing time by adding the dry ingredients gradually as the machine is working, rather than all at once - that way, the flour etc mixes in with the liquid faster.
    Putting your hand into the bowl while it's working is no problem at all. You can't hurt yourself with this mixer, and that's another of its advantages...you can keep feeling the dough as it is being kneaded.

      Thank you very much for this. I just did a bread dough with the hook and did not get a window pane. I could not even find anyone that has used it to make bread dough so I can see how they got the window pane test. Your tips has encouraged me to keep it running next time. I just wish I would see a video of someone doing it too and getting the results. 😁

      @@njuhmbunwe6701 Hello. I've been thinking about doing one...watch this space. Keep persevering meanwhile. One thing I find very effective is to mix the ingredients in the Ank until they are fully mixed together (takes about 3 minutes), then stop, cover the bowl with a wet cloth, and leave it for 30 minutes. This allows the gluten to develop all by itself, which happens spontaneously when flour and water are mixed. Then when you come back and switch on the Ank again, you'll see how much the dough has already developed. After that, use the Ank to knead the dough until it develops the signs that it's ready. I look for three signs: threads that look like mozzarella cheese on a pizza, a slightly glossy surface, and the dough trying to form a ball shape. This is easier to show than to explain, so I'll try to get round to it soon. But keep trying - it really works with the hook, and you'll get great results when you learn how.

    I switched to an Ank a bit over a year ago and love it! It works extremely well with low hydration doughs like bagels. The recipe I use is about 40% hydration and it’s like working with modeling clay. The Ank kneads it like a dream! The motor doesn’t even get warm.

    Mine was bought new, and is about 10 years old, I don't use it every day, but it's never missed a beat, and it's travelled from Germany, to Vietnam, back to Germany, and then to China. I love it. I mill grain for brewing beer and for making whole wheat flour. I use it weekly for making bread dough, and originally bougth it to make pastry dough for shortcrust, rough puff, and puff pastry.

    So fun that it made it abroad! I hade no idea there was a hype about it but it deserves it because it's a great machine. Its been a classic in swedish homes since the 50s. My grandmother and my mom each had one and of course there was no other choice for me when the time came. So happy to see this!

    Thank you for such great videos with all the tips, tricks, and opinions and for sharing all your knowledge based on your experiences and trial and error! I LOVE how this mixer allows us to see everything you and the mixer are doing and what the dough should look like. I just got into using fresh milled flour and making bread and my sweet husband just ordered me an Ank after using a KA for 24 years.

    I purchased the red one🎉. Have been making the most wonderful breads for 4 years. I replaced the hard to clean Bosch with the ANK. BEST mixer ever. Last year I added the blender attachment. Also use 3 different Emille Henry bakers. Milling most flours with KOMO. I highly recommend that anyone with a passion for great bread should have this in their kitchen 😊

      @@CB-lx1km This mixer comes with another bowl/whisk for cookies and cakes. One thing to notes - make sure your butter is at room temp. I had a KA Pro before adding the Ankarsrum - Ankarsrum requires soft butter so you should leave it out for a few hours before baking. The Ank is a powerful appliance and will serve all your needs for many years - you will be impressed how amazing it is.

    Thank you for your video. It provided in depth information about the Ankarsrum. I did watch another video which showed the "dough hook" in operation. I respect your statements and wish you well.
    When I was deciding on what stand mixer to get, I purchased five (I think) different brands to see which I found best for me--I returned all five. Two big name brands that I purchased were KitchenAid (KA) and Bosch--and both of those were returned. I tried several no name stand mixers and didn't find them satisfactory. Because of the price (and more because I didn't know about it), I didn't buy/test an Ankarsrum. I finally purchased another KA, the KitchenAid KSM7586PCA 7-Quart Pro Line Stand Mixer, which was my second KA. In those ~5 stand mixers I tried, the first one was a KA...but a tilt model. I am very happy with my decision, and I would suspect you would be positive about my being happy.
    One HUGE point that makes the KA (both tilt and lift) a better fit for me is that after adding the ingredients (for bread), I can start the KA at speed 1, after 4 minutes, increase the speed to 4, and after another 10 minutes, the dough is perfect. I learned this from one of Bertinet's videos here on CZcams. I have used this technique so often, that I know I can walk away and not be concerned. (I have to provide a caveat here: At speed 4, the KA will "walk" across the counter! I'm considering some options to solve that problem.)
    When I watched your and other videos, when making bread dough (with both the dough roller and hook), you had to move the swinging arm often. In fact, in all the videos I watched, continuous monitoring was required. That, in and of itself, would have prompted me to return the Ankarsrum.
    Anyway, I am very pleased that you are happy with it and I found the video extremely informative and well produced. Best of success on all your cooking.

    I have never needed more than three o’clock position for making bread in mine. I start slower then when flour is mixed in and I set it to off and cover with towel over mixer for 15 min to let fresh milled flour absorb moisture then turn back on to knead at three o’clock position till it’s kneaded to my liking. Have fun and love it.

    Great demo, thanks! An Ankarsrum mixer is a game changer for someone like me who is disabled. My KitchenAid was a chore to use, so I stopped baking for several years. Now I'm back to it and enjoying it and freshly milled flour so much!

      I'm disabled as well. I have been hand kneading and loving it but it wears me out to where I can't do much for a day or so. I'm wondering if it's worth making some payments on this mixer or just buying the Nutramill Artiste.

    You are right about that nonstick coating. They say it’s not Teflon, but it is something else that is just as bad. Several years ago when I got my birds, I got rid of every nonstick pan I had and I had a lot of them. I only use stainless steel now or cast iron. The stainless steel does not stick if you use spray on it. I love them and I will never go back. by the way, my sister’s bird died from the nonstick coating. If you happen to overheat it, it puts a noxious fume in the air. You might not notice it and your family might not notice it, but some fragile animal in your house can easily die from it. That’s why the canaries were sent down into the coal mines. So if it’s killing them, it’s not doing a whole bunch of good for people either.

    I've had one for several years. You have to use it differently from a Kitchen Aid but I love it! Yes, it has a learning curve but it is great for larger quantities. I set the timer when I have a long knead and go do other things.

    Mix on lowest speed until you add the last cup of flour. If the dough starts going up the side then move the roller a half to an inch from the side. Don't lock it so tight that it won't move, it needs to move. Then if you let your dough rest just leave it. When ready to knead set the timer for 6 to 8 minutes on 4:00 speed.

    That's a new stand mixer to me. It looks great. I love my Bocsh mixer though. I got mine for Mother's day 2 years ago. I use it for pizza dough and breads mostly. This Christmas I'm using it to make massive amounts of cookie doughs.

    I have had one for many years and I just got back to it, and my feeling is that it really shines with 70% - 75% hydration dough recipes, it's like magic for those.

    I have the Orange Ankarsrum. I absolutely love it. I’ve made butter, cakes, cookies, whipped cream and breads.

    Wow! Today is my first day to mill my flour. You are so knowledgeable! I had no idea how much knowledge is needed to live this lifestyle. I will be watching a lot of your videos! I'm also from a generation where things where built to last so they were passed on to family members who would get use out of certain things so it's heartening to hear that that is still a thing.     Great Video! Thanks for the info. Wish I could have seen the finished loaves/rolls, though.
    Also, if you're concerned about the non-stick coating on your pans, you really need to check out what is being used for the non-stick coating on your parchment paper. I've singed a piece of parchment paper in my toaster oven before, and the acrid fumes were a huge wake up call.

Thank you for the info about the parchment paper, I have been hearing from all of you this, and looking into an alternative. The parchment paper I use says from vegetables, so not sure if that is different than the traditional parchment paper. Have you found a brand or parchment that seems to be safer? I am looking into this, thank you so much for the info!

    I would just keep to the "if it ain't broke" methods for both dinner rolls AND the Ank: add your warm liquid water and or warm milk first, then your dry yeast and get that going a bit whether just mixed up or left to bubble a bit. Take a fork and beat up those eggs on the side. Then add your butter (which should be melted but that you've let thicken up/cool off for a couple of minutes first - or at least softened to room temp) with your beaten eggs along with your sugar and salt and add that to your liquid and yeast and mix well. Don't just let it go around in circles - immediately push the roller in and out repeatedly for 5 or 10 seconds or so. Then add your flour but not all at once. Give the gluten a chance to slowly form and for everything to mix more naturally together. Even if it's just putting flour in twice vs all at once.

    Wow, I just stumbled upon your channel, and watched this from one end to the other. Although it would definitely be an investment, this mixer isn’t anything that we could afford.     I just got my Ankarsrum and I'm loving it! Just a tip, don't add all your flour in at once. You need less flour with the Ankarsrum. When you pull the arm towards the center and the dough pulls away from the side it has enough flour.

      Thank you! I was actually doing that as an experiment. 😆 I wanted to compare what I was used to with my old mixer with my recipe I make all the time. I always liked to work with a wet dough, so the Ankarsrum is working out perfectly! 😀

      That is a feature I still take time to get used to. I am used to audibly asking Alexa to set timers. But, when I think about it, she isn't all the reliable! 😆

    This is a true work horse and an older version has been in my family for decades. Apart from dough we had some other attatchment and we could grind meat, make sausage, applesauce. The only thing we did not have was a blender.

    I’ve had mine for about two years now. It was expensive but it has worked great. I’d like to buy some of the attachments but haven’t done so yet

    I have been trying to buy an Ankarsrum for a while now but they are hard to find in my area. I was very excited to follow your link and order mine today! The one I want is back ordered but should be here the first of May. I am of course anxiously waiting for it! I have a Kitchen Aid and a Bosch for my bread but after watching so many videos of people using the Ank and preferring it I’m convinced it’s the best! Great video!

    So far I have found that the dough hook works very well when you’re mixing something that is a little too thick for your whisks in your plastic bowl. It also works on very wet bread dough like sourdough. The roller works fantastic for slightly dryer dough that’s not quite as hydrated as sourdough would be.

      I keep my roller tight to the bowl because that is what I believe Pleasant Hill Grains (where I purchased mine about 10 years ago) taught in their videos. I love my machine.

    I have been watching videos and doing research for a new mixer. My hands hurt too much after kneading to do it by hand anymore. I'm intrigued by the home milled flours too lately. I loved the look of the Ankarsrum, but was going to buy the Bosch because it seemed like the more logical choice. However, in my head I kept thinking...I would smile every time I entered my kitchen if I had the Ankarsrum. Watching your video I saw exactly that! You were a bit giddy :) At one point almost hugging it. That is the same feeling I get when watching videos. This powerhouse does EVERYTHING! I think the wow factor is not something to be ruled out. We do a lot for our families and a bit of visual indulgence shouldn't be taken out of the equation.

    One of these is on my dream list 😊. I’m upgrading from a Sunbeam stand mixer to a Hamilton Beach stand mixer for Christmas. I’ve wanted one with the proper paddle, whisk and dough hook attachments forever and the HB is what’s in the budget 😁. I’m going to start squirreling away money for the Ank though.

    I dont use the lid except for storage. I like plastic wrap (it doesn't hate me) and i use the pretty bowl covers that you have linked before too.
    I let the roller "stand" in the dough, but I release it from the arm and move the arm out of the way. Then I put the scraper arm in the hole of the roller and cover for the (2 hour) rest that I do before adding yeast and kneading. I hope all that makes sense.

    I had my Ankarsrum for 10 years now and I love it! My mum had one for as long as I can remember and I am 40 now. The funny thing is thar her accessories fit my Ankararum too.

      Thanks so much! I typically only add Einkorn into some of my bakes, so I haven't experimented much with it alone in breads. Honestly, it's not my favorite wheat choice, lol. If I am going to use an ancient grain, I almost always grab for Kamut or Spelt.

    I usually mix my eggs together a bit before i put in the mixer. Also, I dont turn it off when I add the flour.
    I literally did this same "double batch" last night. I cold ferment overnight and baked this morning.
    I always get 18 rolls out if the batch (~50g each) of your 12. Then I did a 1 lb loaf and 6 hamburger buns.

    Im so happy you have found Ankarsrum. I’ve had mine for 15 yrs and I still love using it.
    The advantage is the design. The bowl sits on top of the motor, so you can make much larger batches than you could with a KA.
    It makes absolutely fantastic bread. As you said, it’s an investment you can pass on to your kids. I would venture to say it’s the best semi professional machine for dough you can get.

    thank you for the video, this is helpful. I am looking to replace a KitchenAid mixer that I inherited from someone who passed away about 7 yrs ago. All the mixers are really expensive, so they are $500 to $800 for the KA or the Cuisinarts. I have not heard good things about the newer generation of KA mixers, comments that they are just not well made and do not hold up well. So this one looks very interesting. I did not see any ingriedients getting tossed out of the bowl - that happens ALL THE TIME with my KA, if I am doing even a moderate sized batch of anything. Makes such a mess! did you find there are times when the stuff gets tossed out the bowl with this mixer? thanks for the honest review, much appreciated

      I have been using this mixer now for several months, and have not had any problems with things getting tossed out. I have several new videos with me using the Ankarsrum mixer as well if interested in seeing it in more applications.     I love mine, the Breadeckers people have a lot of good videos on using these, when I first got mine four or five years ago that's kind of how I learned to use it, it's a lot different than my old sunbeam, or my sister's KitchenAid. I bought my sister an older used one at a garage sale, and now she won't even use her KitchenAid.

    What an Excellent with a capital E video. I don’t know how many I’ve watched, tons and tons on this machine. I purchased it 3 days ago from Pleasant Hill Grain. By the way, I purchased my little compact Bosch from them too. Love Cindy. She was a huge help. So I got the Yellow Mixer. It was sent out today 10/9/23. Sooo excited. Anyway, you did this video like nothing! It’s hard to believe you haven’t been using it for along time😊 Everyone uses the words intimidation and learning curve. So I’ve been kinda dreading it. Especially that huge bread dough hook😅 but I really enjoyed watching you watching this machine because I felt like I was watching me when I get it.       @@maryannedeering1663 the Compact was my first stand mixer (couldn't afford or justify an Ankarsrum back then) and I still love it--it's a little tank! HOWEVER, you really should get yourself an Ankarsrum. Have you watched Ashley McCord's videos? For all intents and purposes, she's the last word on operating the Ankarsrum properly.

    It's best to put half the flour in then start mixing. Then add the yeast. Gradually add additional flour until you've added enough. You know how the amount can vary based on the weather. It's best to not add the yeast until after the first half of flour is mixed in so that the yeast isn't in direct contact with the salt

      Thank you! I teach a method in all my videos and in this one exactly that! I don't put the yeast in until after everything else is mixed and rested. That way the fresh milled flour can start absorbing the liquids. I did put in all the flour at once, because I was doing a direct comparison to my other mixer that I make my same recipe in all the time. I wanted to see how they compare. Happy Baking!

    Try the dough hook! When I bought my machine, it was called a "Kitchen Assistant." My mixer is approaching its 20th birthday and is still going strong.
    Anyway, try the dough hook! I used the rolling attachment for years, and then I tried the dough hook. I never looked back! The dough hook stretches the dough in a way that the rolling attachment does not.

      I actually press and fold it down, but my husband will place the parchment paper in one pan, then press the other pan down inside to shape it perfectly. Then, we just cut the excess off with scissors.

    I have one of these and I would add the butter directly to the flour and mix everything else separately before adding to the flour. Works great. I also make sure to use cold water to delay the fermentation as long as possible.

    I have a question because I’m kind of new to some of these fresh grains. Do different varieties of red hard wheat look different? Because the one I got which is perfectly fine but strangely it’s more like rice than it is wheat. It seems like a very small kernel. Whereas my other wheat is rounder and more substantial looking. Is that normal for red wheat that it’s a small skinny kernel?

      There are some different varieties out there, you can always contact where you got them from, they should be able to tell you what variety you have.     I currently use Bosch Universal Plus with pro dough hook. I find it mixing times consistent with mixing times for industrial spiral mixers. I do all my recipes for bread in grams. This mixer looks interesting.

      I started with the Bosch Universal because it was cheaper than the Ankarsrum thinking it was similar enough. A few years in I purchased the Ankarsrum. What I found is a huge difference and would never go back to the Bosch. The key difference is, although they are both open and I love them both for that, the Bosch significantly heats up your dough due to friction between the dough hook and the bowl. Using the Ankarsrum roller / scraper, 0 friction. I can kneed dough for 40 minutes or more with no heat gain. Even with the Ankarsrum dough hook, I see little added heat to the dough. (also, the bosch motor gets hot limiting use, while this is not the case with the Ankarsrum)

      Yes, I agree that the Ankarsrum mixer is very gentle with the dough, but still gets the job done like a boss! It really produces the most tender doughs! So fun to use too!

      @@o0Zuel0o I have the Bosch Universal Plus and I was thinking of switching but not sure. I tend to work with wetter doughs like 70% hydration and Bosch tend to stick. I was thinking if I should get a the Bosch metal mixing bowl to prevent fictional heating or just invest in Ankarsrum.

    For those in the uk- hodmedods sells hard white wheat. I use the Maris widgeon for bread making, or forestwholefoods sells hard white wheat berries too, but they don’t have the %protein or falling number listed as they aren’t sure of that information. I believe buy whole foods website sells hard white wheat too. It’s more difficult to find soft wheat, but Hodmedods ‘Flanders’ wheat is a good option. It’s my favourite for baked goods thus far. I’ve yet to find hard red wheat though. I’ve found that einkorn is a decent replacement for spelt, if you can’t find spelt. I hope this helps someone 🙂

    Just came across your video,quite in I have a kitchen aid professional series 600 but I find it doesn’t mix up 4 loaves of bread the motor starts to get hot ,anyways the machine you just showed I’ve never heard of it before iam 71 so not sure if it’s worth the investment for me I’ll have to think on it ,also wondering in your recipes where it calls for fresh milled flour can I just use reg all purpose flour thanks for great video

      Thank you so much! This mixer is an investment, and I plan to pass it down to my kids, and hope they do the same! I used to have a kitchen aid, and large batches of dough ended up burning mine up. So, I switched to this. You can use all purpose flour, but you will have to change the amount of flour by just a bit with each batch accounting for the different moisture levels. Hope that helps! Happy Baking!

      Thank you, you could add a bit more sweetness, possibly 1/8 more cup of honey, but the dough will be a bit stickier to work with. OR you could melt some butter, and honey and drizzle over the top as well. Happy Baking!

    I am torn between this mixer and the Bosch mixer. The Bosch seems to mix that dough up so quickly and easily. You don’t have to keep messing with the arm. I’m leaning towards this one, but you definitely have to mess with it a lot more than you do the other one. What do you think about that?

      I personally love the adjustability of the Ankarsrum! But, there are many people who love each mixer, and they are both wonderful! I was playing with this machine much more than normal in this video, because it was the first time I used it. But, typically I only need to play with the arm in the beginning. The Bosch is wonderful for kneading the dough quickly, but the very thing that makes it great is also what has causes some people to become frustrated. What happens is it kneads so quickly that it also can over-knead the dough much quicker. So, people are going past the point of nice stretchy dough, and getting bread that is unsalvageable. I guess in a way this one needs a bit of babysitting in a different way to make sure the dough doesn't get over kneaded. I think each is great for different bakers. It just depends on which you prefer.

    Seems using the whisk attachment to mix the wet, butter, and salt to blend would prove better - then switch back when adding the dry

    The knob that holds the arm in place, is the inside threading of the knob plastic? I've read reviews that said it was and the threading stripped. But I'm not sure if they were reviewing the older model (with the white beater bowl) or the newer model like you have.

      I just took the knob off to check, and it is metal on both sides of the threads. (both male and female end) So, that must have been an old model. It is very sturdy feeling. Hope that helps! 😀

    I’ve been wanting to get the ANK mixer, but I can’t justify getting it because I have a Bosch Universal. I feel like having two mixer would be too much. Thank you for your video, your dough with the ANKARSRUM was extra soft, much softer than with my Bosch.

      Oh, dear. You need to join our online stand mixers group. Some of us, myself included have THREE mixers (in my case an Ankarsrum, a BUP which I haven't used yet, and a Bosch Compact). I don't think my BUP is going to edge out my preference for the Ankarsrum but I'm looking forward to playing with it one of these days.

      @@hilmadavidson6361 that just might happen because even though I haven't used my BUP yet (I JUST moved into a new house a few weeks ago), the fact of the matter is that the Ankarsrum does everything well; the only issue you might have is that even though the S/S/ bowl handles everything, you might find it cumbersome to use it for a small batch because of its size and weight. Some people in our group prefer one over the other for various tasks but I think there's only one member who prefers the BUP for bread. I know that our list mom prefers her BUP for (I think) cookies, so it's possible you might as well.
      Ultimately, you're the one who's going to decide whether or not your BUP sees use after buying an Ankarsrum. Hey, at the very least you're going to want to do some side-by-side comparisons, no? 😁

      It is 14.5 inches tall to the highest part of the mixer. (The bowl doesn't add any height to it, it fits under the top portion of the mixer.) I hope that helps!

    I wish I would have known you had an affiliate link! My husband just bought me one for my birthday! I have made these dinner rolls twice. The first time in my kitchen Aid, then today in my new ANK. I can not get my dough to pass the windowpane test. It just tears apart. Both times I kept Kneading the dough in hopes it would get to the correct consistency. The rolls came out fine the first time. This time I am waiting on them to rise, so we will see. I am not a baker and am new to freshly milled flour. Any suggestions on what I might be doing wrong?

      Typically if you are not getting the window pane it is because there is too much flour. But, really I try not to fuss about the window pane too much, I just show it so people can see. If you knead until the dough is nice and stretchy without tearing easily that is what you want. I highly recommend you watch my Focaccia video, I use the Ankarsrum, and show you the consistency of the dough and the stretchiness. Also, make sure you are doing the rest period before you start kneading. The fresh milled flour really needs some time to start absorbing the liquids and soften the bran.       It is definitely quicker than the kitchen aid, it is gentler than the Artiste, and a bit quicker than my compact mixer. But, honestly, this new batch of hard wheat that I got kneads in less than 8 minutes, my old wheat that I used to have could sometimes take 20-25 minutes. So, there are a lot of factors to consider. I am very happy with my Ank, and it is fun to use!

      This one is an investment, but I have not regretted my purchase of it at all! It is a fantastic machine, and kneads the dough so tenderly. Others say they love the Bosch, but it just may be personal preference. But, I will say this, I don't regret my Ankarsrum purchase one bit! 😊

      Buy the ANK. I had kitchen aid mixers then a Bosch. This is superior in every way. Much easier to clean as well 😊

    Saran wrap also fights me often. Try dispensing it over wooden surface, cutting board. Then easier to wrestle and lift up.

    Husband surprised me for Christmas. I'm super excited but just wanted to make a comment. In watching other videos and FAQs from Ankarsrum, they state that the parts are dishwasher safe...but not necessarily in the US. Our water hardness/softeners can affect it, especially the rubber on the roller top. So, be aware. Don't ruin your baby.

    I don’t get adding the yeast after everything else. Shouldn’t you let it develop and bubble first?

      I mostly use instant yeast, and I don't want to activate it and have it exhaust itself with the autolyze step. If using active dry yeast, this rest period is when I would recommend activating the yeast, then put it in when the yeast goes in. I hope that helps!

    We use a very wide box of plastic wrap from Sam's or Costco. It is wide enough that it folds around the bowl.
    No bunching!

    That is a copy of the Electrolux Assistant that has been around for 80 years. I bought one 20 years ago specifically to mix pizza dough. The Electrolux Assistant is a Swedish product and is high quality. It was and I expect it still is expensive compared to other mixers.

    Great video, as usual. My Ank is from the 1990s and I got from eBay. It works soooo much better than the KA I had for 40 years. On your cookie recipe, I think you said that it could be made without using sourdough discard, but there's nothing in the recipe about substituting something else. Would I just add a bit of yeast and extra liquid? Thank you.
