@@Chefrachida That's a good idea! I want to give my family a home made hamper each. I'm making pickles and jam, etc. Do you think they would be ok for Christmas Day if I made them a couple of days before, say 22nd December and kept them in a plastic zip lock bag?
Yes they will fine up two months frozen. But I encourage you to make a small batch of the cookies this month so you can go through the process, eat some and freeze some to experiment. Good luck.

I'm from Libya it's a traditional cookies with almonds originally but we made it with coconut too.

Great question. I always freeze them in plastic bags.
