Turning off your own microphone will mute others from hearing you, but you’ll still be able to hear the audio from the content. But playback controls are shared by everyone watching, so anyone can play, pause, rewind, or fast forward. Changing settings like closed captioning and volume will affect your device only.

If you are using FaceTime on a Mac (you didn't say), you can record your call using the builtin MacOS screen recording feature. But if you want to record FaceTime on an iPhone or iPad, you can do it if you connect your phone or iPad to your Mac, and use QuickTime on the Mac to record the call. If you don't want to do either of these things, then the answer is probably "No." If you want to see the exact steps, google this phrase: how to record a FaceTime call on your iPhone or Mac.
