What does it mean to listen for the music behind the words?

Mmm, it is a bit of an English idiom meaning "listen for what a person is REALLY saying" rather than just focusing on the facts and words that are coming out of their mouth. Listening to the music behind the words takes into account the tone, the posture of the person, the context of the situation, the purpose of what they are saying, etc. etc. Too often, we listen for just the facts and we miss the whole picture.
