There is a fifth phase. As an immigrant, I've been all four. Basically, since every bakery chain - and there are loads of them - has its own sortiment, you start with a crackdown, then become a chooser, then the thinker, and end up as a pro. So, the fifth phase is where I'm now. I order my bread for the next week. And when I forget, they just keep it for me, because they know that I'll come and what I'll buy.

I used to work a a pig stall for a while, and there the pigs, among usual stuff, were fed the rests of the local bread factory. Like, you know, borders of the cakes, over or undersized bricks of sliced bread not fit for the market, and stuff. Unfortunately, it all first went to a mill where it was mixed with other stuff and formic acid, and then pumped right into the mangers. So, in order to be phase 7, you gotta be a pig, I guess...

The people who always ask what kind of flour or what ingredients are in the bread are missing. Fun fact: Our Baker has a Flotti Karotti bread with carrot flakes in. At Easter they bake a whole carrot in a number of breads and if you find it you get a price ( like a whole cake).
I worked at a German bakery for about 2 years. Each type of bread had a 4 digit number that you needed to learn and enter into the register (we had about 30 types of bread + sandwiches and cakes) to be able to ring up a total and if you got it wrong there was no way to delete it. You had to start from scratch. My favorite bread was the “Dinkelhalfe Roggenvollkornbrötchen“ 😂

I go in, stand aside, think for like 10 minutes, then go in line cause otherwise I'd be taking up everyone's time and having a nervous breakdown cause I hate having people wait behind me😂
