My Favorite Tomato Based Red Enchilada Sauce

- I did the chile based red enchilada sauce and now it's time to showcase the favorite tomato based red enchilada sauce. This one is even easier to make and super tasty. If you want it spicy just add the spicy stuff. Some Chile de Arbol peppers or some cayenne chile powder works great for that. Enjoy!
Red Chilie Enchilada Sauce #2
15oz can Tomato Sauce
2 dried California Chiles
1 dried New Mexico Chile
1 dried Guajillo Chile
1 tsp Cumin
1 tsp Mexican Oregano
1 tsp Salt
2 cups Water

You can always order them online. The chile guy has a good selection, but there is always amazon... or just a can of the stuff. That works too.
Yah, I'll be making that on an upcoming weekend. I'll have to sub some peppers, but that will be an interesting experiment, too.
The canned chipotles would work great and are pretty easy to find. I have always lived (until now) in a place with a Mexican market nearby. You can buy anything for super cheap. Such nice people, too.
Hmm. Now that you mention it, I probably wouldn't have to drive more than 20-25 minutes each way to find the peppers you use here. The St. Paul side of the metro area has a significant population of folks with ties to Mexico and south Texas that have been established in the area for many generations.
