  • 2.6 million years ago, alternate cold and warm periods caused the Rhenish Slate Mountains to rise. Terrace sediments formed as extreme frost in the cold periods destroyed surface rocks. The rivers carried away the mixture of sand, jagged stones and boulders, and due to varying river heights deposited the sediments in the inner curves of the river. This process formed the sediment terraces on which our Merlot vines are grown, and gives it it’s unique attributes.
    We harvest the Merlot grapes by hand, allow 7 days of cold skin contact, and ferment using natural yeast for 14 days in steel vats before aging for 18 months in used barrels. Minimal use of sulfur dioxide and no filtration allows the true nature of this ancient variety to emerge.
    Our vineyards and winemaking produce cool climate wines, that are savory with a distinct mineral profile. Aromatic complexity and freshness exude from this ruby colored wine. Paprika, gooseberry and spice translate to the palate that features a velvety mouthfeel and well-integrated tannin and a lingering finish. It pairs fantastically with meats like turkey, duck pork or veal. The higher acidity makes this an incredibly versatile wine. Ideal cheese pairs include hard, aged cheese like Asiago, Parmesan or Machego.
