We had the COVID after Thanksgiving. Luckily not a big deal for us. Thank God you are better. Life would not be as good without you in the world. We all need to take better care of ourselves this year.
Also, to the cheese snobs out there who scoff at Velveeta, grow up. It is a legitimate food and is great in certain recipes. It is a key ingredient in Spinach Maria, a great side dish at Calhoun's restaurant in the Knoxville area.

A quick little heads up for those that like different cheeses. You can add a little sliced American cheese or calcium citrate to smooth out your cheese sauce. American cheese has enough calcium citrate in it get the job done though.

My mother use to add stewed tomatoes in her mac n cheese. She got that idea from my grandmother on my fathers side. That's how I make it. So good. I'll have to try Ma,Ma C's version. That looks so good.
