Yes, the pools were perfectly designed. The one more suitable for kids had the slide and the lazy-river and the other one, suitable for adults, had the pool-bar and jacuzzi. It was balanced.
Advice on what is or isn't "good music" is based on individual opinion and preference. It is their channel, and they do a great job in both filming and much of their music selection.
Thank you so much! Both resorts are exceptional. The One&Only has the best beach in Dubai with stunning skyline views, plus spacious and beautiful pools. It also offers free boat rides between their hotels, which is a lovely touch. On the other hand, the Emirates Palace has the best pools I've seen, including a fantastic kids' pool with rides, a lazy river, and an incredible adults-only area with a pool bar and jacuzzis. While both hotels are very clean and well-maintained, Emirates Palace is a notch above, and I found the food to be better there as well. It really depends on what you're looking for-beach views and city vibes, or the ultimate pool experience with top-notch dining. Also Emirates is considered to be more of a 7 stars hotel :).

What's the atmosphere like here? I heard this part of the UAE is still quite strict on dress attire and public effection. This was an incredible review too!

Our conduct was typical and respectful towards the locals, like in any other countries we visit. Although it is indeed more conservative than Dubai, I observed women wearing shorts, and I did so myself, also bathing suites at the pool or beach.
