      Maybe not unhygenic but perhaps questionnable food safety processes. Has that been thoroughly clean with what after each batch. Personnel working hygiene. Working area is clean and safe? If follow iso9000 standards then yes questionable
      But for a small cottage industry? Maybe not so. These are not made for export

    Those people don't know what they're talking about because it gets boiled for hours and hours. The process itself is hygienic (not the word id choose but it works), and sugar is self preserving. The conditions and equipment appear to be sanitary, and I see no reason why people would say the process is unhygienic.

      Im glad someone else noticed that.
      After visiting a sugar refinery because the company I worked for was sent a batch of invert syrup that tested positive for E.coli I found less than sanitary working practices.
      What's happening in this video is more sanitary than the multi national sugar company.
      That was around 30 years ago.

      Also just to mention sugars are very self preserving. Now there could be cross contamination, or it could be stored improperly, but these folks know their traditions, and I'm sure they have methods to keep it as fresh as possible, for as long as possible.

    It doesn't need to be in a Sterilized Kitchen or Factory to be Hygienic. As long as the tools and ingredients were washed beforehand, the heat will do the rest in ensuring there's no bacteria or whatnot.
    I've done something similar back home using a regular mortar and pestle. I use it to make Ginger Milk for when I'm feeling unwell or unable to sleep

    Hello, food microbiologist here! In most cases, something is tested for 3 things in regard to shelf stability: water activity, pH, and does it have a cook step. I see there is, in fact, a cook step. This does not have to be boiling, but it does need longer times the lower the temp. Given ginger is naturally antimicrobial, and the reduction over heat, I would say it is likely alright. Though I cannot say for sure without a sample.

    Sou da cidade de Caçapava, SP, no interior do estado de são Paulo, Brasil.
    E minha cidade é conhecida por ser um polo muito antigo de " rapadura e taiada" ambas são feitas puramente com calda da cana, mas a taiada, que por sinal é o nome do doce rapadura com farinha de mandioca e gengibre deixou por herança seu nome a todos moradores de Caçapava, que passaram a ser chamados de taiadas. Aqui ainda tem os alambique, onde é extraído o caldo da cana, chamado de " garapa" e depois é feito cachaça e também doces tais como rapaduras como essa mas sem gengibre e a taiada que é com gengibre e farinha de mandioca.

    I watched it without reading the caption and am surprised anyone would think it’s unhygienic. It’s heated enough to steam, and that kills most bacteria that live in food we eat (this is what pasteurization is). It also has brown sugar in it. So, for me, it would be a question of, is it healthy or unhealthy? What’s being added that’s not natural? But of course, cleanliness is important. They’ve been doing this for so long I’m sure they know what to do to keep themselves from getting sick.

    That pounding equipment is used for many other applications like bread kneading..a sweet potatoe reduction..quite useful. O love learning these techniques. Having grown up and owned agriculture and animals I have great respect for the processes involved. I was just enjoying a cup of fresh roasted coffee beans and fresh raw unpasteurized thick cream just harvested 2days ago. Theres no better taste in the world. I was amazed that when I began using raw whole milk and cream, my nails hardened, my hair thickened and my skin is smooth as silk at 60+. I used to suffer reflux..not anymore. Its like my nerves in my intestines and my micribiome have healed. Probiotics at work.

      I grew up on a farm and we milked two gallons a day from one cow and we had fifty head. We made our butter, cream and clotted cream from that milk and every March to April just as the sun starts to make the sap run we tap our sugar maples to make syrup. We only have a couple of hours each day to tap in the spring and it only lasts a couple of weeks but we get enough to last until the next spring!

    GINGER IS A LIFE SAVER! When my chest was burning from covid and chest congestion, I had (GIN-GINS) ginger chews from the Ginger Peopleand it created such a soothing sensation in my throat and chest. I was able to breathe so much better. I also put red light therapy on my chest at maximum level while I went to sleep and I was able to suppress my coughing. Ginger is a gift from GOD!

    In northern Nigeria 🇳🇬 we call it mazarqwaila sweet, very natural, and is being used as a sugar substitute due to recent economic situation😢

      ​@@nadkoch Nigeria has different climates, northern Nigeria is dry and arid as it's close to the Sahara region. This could explain why the northerners came up with their own sweetener alternative to sugar (since it might not usually grow in that region), and with spiking prices of products since last year, it might actually be cheaper than processed sugar cubes.

      Honestly, keep using it !!! Sugar isn't that great and I'd use this over basic sugar.
      I prefer syrup in my coffee but syrup is expensive compared to sugar that lasts longer
