The game came out for GC, PS2 and Xbox so you could try finding it for any of those if you have any of the original hardware, as for emulation I was running it on Dolphin which is a GC/Wii emulator
Yeah it's the one racing game I always come back to from time to time, the older ones are great too, it's a shame we don't get these kind of racers anymore.
