This stall has been around for more than 30 years is famous of their “Bu Jian Tian” Char Siew Wanton Noodles 不见天云吞面, literally translated as the “roast pork that doesn’t see the sky”.
That is because the meat is taken from the armpit of the pig - a part which isn't exposed to sunlight, making it more tender than the other cuts. Best paired with springy noodles.
