  • Raw fish in the form of sushi has become widely accepted in this country. However, with lingering fears of E-Coli, the thought of eating raw beef seems unfathomable to most. Becoming hooked on beef tartar while visiting Poland several years ago, I've learned how to safely and deliciously prepare it at home. Check it out!

    E-Coli is from cross contamination with a punctured digestive tract of conventionally raised beef. If you are buying Australian or New Zealand beef for example you have nothing to worry about.
    Same goes for the eggs; if you have chickens in your backyard they are not being fed antibiotics therefore have no salmonella in their digestive tract. The same cant be said for supermarket eggs which I wouldn't consume raw.

      In regards to eggs, it's actually only the outer shell that has contamination on it. When people get sick from raw egg it's from eating small amounts of unwashed eggshell in their food. Wash your eggs off before cracking them if you plan to eat them raw.

    Us Europeans have been eating like this for centuries, and it's a shame that many are so timid to try it. Love beef tartar; big staple in Polish homes. I remember adding a raw whole egg in the center, then mix all the beef, egg, seasonings, and pickled veggies. so damn good.

    Raw meat is legitimately delicious. Carpaccio is amazing but even just a simple Raw steak is also amazing. I know what he means by being hooked. The only way I can explain it is that it's like your body is telling you that that's what you should be eating. I think our bodies recognize that meat is healthier uncooked so long as it's free of bacteria and viruses etc. I get the cravings for it whenever I go to the grocery store and see the meat isle.

      FeelTheLack Well I mean there's definately some risk to it, but you can try to learn about the different butchers and how they do things. Some are cleaner than others. Family owned farms are generally cleaner than than the ones who mass produce everything. Some of it is just your body getting used to eating raw meats. I honestly believe that raw pork and chicken should be avoided like the plague. Raw beef on the other hand can be just fine. I think one of the reasons many people feel sick when eating raw beef is just mind over matter. If you are convinced something isn't safe to eat and that it'll make you feel sick then chances are that it will. If you've reasearched everything properly and know that you have a safe piece of meat, then the most difficult part about it might be getting past the fact that it's raw. Sometimes just the fact that it grosses people out can make them feel sick even if the bacteria doesn't actually make them sick. I suggest starting with foods that are meant to be eaten raw like carpaccio at a fancy restaurant. It's expensive, but you know that at a fancy restaurant its going to be safe or else they wouldn't risk serving it.

    Cooked meat is dead, so it is not digested. Raw meat is alive, which means that all enzymes and proteins are intact. It practically digests itself. If you eat it without all condiments, raw and with good butter you should make yourself from non pasteurized milk... then you are getting it all and don't bother your stomach with all the vegetable or plant poisons.

    I have a Polish girlfriend and when i first went over to Poland to meet her family, there was a huge dinner - Tatar being part of it. Not to be disrespectful, I tried the whole shabang - with toasted bread, chopped pickles and onion. It was actually amazing and I eat it often now from the local Polish shop here!     tip from Poland: tatar (we call tartare tatar) can stay safe in a fridge for a day if you mix beef only with oil and salt. other ingridients (peppar, onion, pickles) can change color and texture. And my tatar alway goes with pickled boletus (the king of mashroom).

    Like Evan said; don't try this, but I get ground sirloin, put melted butter ~ tbsp on/half pound with plenty of seasoning salt, ground pepper, and fresh parsley. I've been doing it since I was about 5 or so when my grandmother showed me. Never gotten sick. It's delicious!

    Raw meat is easy to digest. Many people note that indigestion is eliminated after switching to raw meat, although one probably wouldn’t have indigestion if they didn’t eat grains.

    One of the best diets is raw fresh meat, raw fresh small fish and shell fish, and seasonal raw/cooked lightly veggies and fruit. But this varies on each person as we are all unique

    You pick up samanila from the egg shell. When the chicken lays an egg she has a coating that kills and block bacteria also prevents evaporation of the whites.
    Storing by egg producers, usually only wash the eggs when they are being shipped out. At that point the egg is venerable to Bactria and any pathogen. And should be refrigerated. A farm fresh egg, unwashed can be stored on counter top if tempter 72° for 30 days. The same egg can be refrigerated up to 6 months to 9 months, depending on storage condition. (Mother Earth News: eggs at 9 mo are still eatable, but smelled and did not look good or taste good. End of test.).

    I had a Polish friend that used to buy the beef from a regular supermarket and it was fine we never got sick from it but I wouldn’t recommend that at all anymore that was more than 15 years ago I will get organic grass fed beef . How she used to make It with yellow onions ,soy sauce ,oil ,salt and pepper and the egg yolk we used to put it on a Polish bread couple of vodka shots OMG‼️ so good delicious 🤤 I am again start making it again but of course with better quality ingredients that she used to make it with.

    I think the only real bacterial threat to raw beef would be E. coli, due to its acid resistance. To my understanding your stomach acid can kill pretty much everything. From what I've read about H. Pylori, which is another acid resistant bacteria, they actually do die out if the PH level of your stomach acid is normal. So in the end if you got normal acidity in your stomach, you have a better shot of not getting sick from eating raw stuff. My grandparents from Korea, who owned livestock, grew up eating raw meat, My grandfather was healthy with thick black hair up to the day he passed on at the age of 92, and my grandmother is still alive so I'm sure its quite safe if proper precautions are taken like Evan said.

    Raw meat has poor digestibility, and poor bioavailability because we evolved to lack the enzyme to digest it, as we don't need to hunt and eat raw to survive. Raw egg has half of the bioavailability and contains avidin which has high affinity to biotin and will inhibit it. But if you like it, go for it. For me personally, Just the fear of eating raw meat would make me stop, even if it was a fresh piece, some meats contain other organisms, fungus, worms, etc.. that reside inside, so like you said, there must be full trust with the butcher.

      Actually, the raw egg thing isn't true, you have quoted very old data, there is a recent study that shows there to be a very small difference in bioavailability. I'll try and find the study.

      Raw meat when ground is easily digested because it has a large surface area. The only problem with digesting raw meat would be to swallow large pieces and that goes for cooked meat too. Remember when your mummy told you to chew your food? Now you know why.

    Hi Evan! you've probably already know this but the spice that Charlie mentions - Maggi - is nothing more than a universal liquid spice where the main ingredient is the herb lovage. It is strong in smell and taste but tastes awesome! If you smell the herb you will get the same smell if you would open a bottle of 'Maggi'. For the polish version of tartar - in my opinion crucial (btw. I am from Poland myself) :). But I saw that you tasted this with cornishon. You should try it with the pickles that are called 'kiszone' :) - ask Charlie the next time - every polish guy should know - they can twist your face but taste delicious :)

    Looks great. I have ate this and raw hamburger meat sprinkled with some garlic salt and pepper since I was a kid. I love it. Same as eating a very very rare steak. I never used the egg, but when I open a fresh pack of hamburger, i eat it while Im making up burgers.

    I live in Czech Republic (country next to Poland) and it is very common to eat this meal in pubs to beer as well. A lot of people is eating it here and I never heard about any health issues with this. But also it is known meat or beef is generally better quality than in USA for example (meat industry is not so mass industrial business here).

    Freezing raw meat for two weeks will kill most parasites and prevent bacteria from growing. I've been eating raw organ meat smoothies for years. I tried steak tartare a few months ago and it was so good that I have never eaten cooked meat since. Gotta put some lemon on it though! I always buy the cheaper cuts of meat. Only beef (and fish). I like it sliced with the food processor while slightly frozen. I use raw regular hamburger all the time to make beef jerky and try not to let the drying temperature get over 102 degrees. Ground heart meat also makes good jerky. I prefer a decent portion of fat with my raw meat rather than expensive oils from a bottle though I will use coconut oil sometimes. Raw fat actually tastes pretty darn good.

    you don't use maggi, use worcestershire sauce to make your beef tartare. here is the real recepie;
    ground beef, salt, pepper, olive oil, french mustard, capers, pickles, one egg yolk, chopped onions, fresh chopped parsley. tabasco.
    I 've been a Chef for years and actually i'm on a diet, so I eat tartare almost every day. i've never ever been sick or whatever. Pussies are just not used to it, it's very healthy, a lot healthier than the shit you eat in macdonald's. no need to be harcore to eat beef tartare....

    I completely understand this, I also became hook on beef tartare since I had it in a particular restaurant in Poland. I haven't been able to stop thinking about it since, it's so good.

    Germ theory is just that: a THEORY. We are WAY to concerned about germs. As a result people have more and more gut/digestion issues. Inuit Eskimos take 100 birds and put them in a sealskin and then bury it for one year, after which they dig it up and it is a highly prized product for them to consume and prepare their gut biomes for the coming long winter months where their diet becomes a mono-type of diet of seal meat and blubber. The high meat of the buried birds gives them the digestive power to consume that diet throughout the winter. He is right about the initial quality of meat though, but you can eat raw chicken and meat that is pasture raised organic throughout it’s entire life.

    I like the way you did it, with a nice cut of steak freshly ground up on the spot. I am eating some supermarket angus ground beef mixed with egg yolk, capers, tobasco sauce, and butter. I know people say to not eat ground beef but I’ve done a little research and feel completely safe doing it.

    yummie, its not popular only in Poland, its typical meal for all central Europe (Czech Rep., Slovakia, Austria, Germany, Switz.). Iam from Czech rep. and you can find it in every better restaurant.

    Thanks Evan for telling about the tartare being safe if bought for that reason from someone reputable. I had it in The Netherlands many years ago and was told it was safe. Also ate raw herring there dredged in onions. I really enjoy the things about the food you eat. I'm a foodie also. It's all about the food and quality of same.
