TOMATOES - CANNING STEP-BY-STEP (OAG 2015)

  • This video is about canning tomatoes.
    Showing how I do it.
    Tomatoes are canned using a process called "Hot Water Bath", no pressure canner is required.
    My tomatoes are the high acid variety so I don't add vinegar or lemon juice.
    This round of canning brings me up to 95 jars this canning season.
    Watch a later video to see how I process the excess juice.

    I love your videos because I love your voice and southern accent and you don't dilly dally you tell what needs to be done and you just do it. I learned a lot, thank you my grandparents had a beautiful vegetable farm but passed away before I was old enough to ask him how he canned his veges. So thank GOD for people like you who take the time to teach younger generations and thank GOD for youtube.

      The words you have spoken (yes, I think of the comments as words spoken) warm my heart and encourage me to keep on making videos. And I hear the same sort of comments from others about not being able to learn from their grandparents about gardening. As to me dilly dallying about it, I am a details person and that carries on into my videos. Thank you for being one of my cherished viewers!

      Candace, thank you for your kind words. When you tell me you appreciate what I am doing, it really makes me feel that I am making a difference with younger folks like you. And actually, I wish I had asked my parents things that I now think about, but it is too late to ask them now. I grew up at a time when there wasn't a fast food joint on every corner of town. A time when mothers cooked three meals a day from what we call scratch. Nothing from a box, bag or freezer. When I was a child Mom cooked on a wood stove, we didn't have electricity or running water, no inside toilet, we didn't know we were poor but we were happy!

I would like to learn all you know:canning meats,making homemade soap, tanning hides to make blanket's,etc...Your way of life,back in the day. I seriously believe, that knowledge,will be life saving....very soon!

    Same way my granny does/did hers!! Exactly 💯! And they are absolutely amazing and the BEST tasting 🍅 I have ever ate!! She would grab a can of canned tomatoes and cook a box of elbow macaroni...We had dinner in 10 mins! We ate 🍅 and mac soup! Delicious 😋!! Grilled cheese on the side!! Heaven.

    I'm from a farm in South Alabama but have raised my son in the city when I came to Nashville. Even in an apartment we still grow and can. I can't yet make him understand how important the knowledge is that you're passing along freely but I still make him do it. We truly do see farther because we stand on the shoulders of giants.     I love the tub water bath great idea, I've been canning for years always looking for easier ways its a lot of work but sure worth it when your eating all your garden goodies in the middle of winter ✌also I always add 2 tbs of lemon juice per quart of tomatoes just to make sure it is acidic plus it will keep for a few years 👍

    You are awesome! Right to the point - no mucking around. Some of my best memories are from spending weekends with my grandma canning and listening to her stories!! I paid more attention to the stories, thinking why would I ever need to learn to can or sew?? She was a seamstress. Now at 53, with the world the way it is?? I wish I'd of paid more attention!!     I so love your videos. You teach how to do it like my grandparents like my mom would. Get to the point and get the job done. I remember when my parents had a huge garden and it was my job to weed that big thing. And then how they would can the food that they did and no air conditioning and how hot it was. Because the big yard we had didn't have a lot of trees they planted them all so they weren't real big yet. I'm watching this today because I have a few tomatoes and I like your strategy of it not having so much liquid in it. God bless you

      Thank you for watching my videos. When I can tomatoes, I want tomatoes in the jar, not a lot of juice. And when I can tomato juice I want juice in the jar not a lot of tomatoes.     Thank you for making this video. It brought back memories of my Grandma ,when she would have a round tub outside on a fire. canned a lot of tomatoes!, some she would add hot peppers to make it spicey. Now maybe I will give it a try. God bless you.From south Texas

    I live in South Carolina and we have had a lot of rain this year! So a lot of growth. I found out about you from watching Wanda cannng your green bean recipe at Deep South Homestead! I plan on trying this method with the vinegar, and also your okra. Planted okra first of July so it will come on late. Thank you for your Channel!

      Kay, the vinegar green bean canning is the way folks did it years ago. before many people had pressure canners. We have had a lot more rain also than normal years, at least the grass is growing good. Okra canned my vinegar way and then fried is better than fresh okra fried. Okra is a hot weather crop so yes, it will come on fast and produce all the way to frost.       Robert, when I can tomatoes, I want tomato in the jar, not half liquid. This is the way to have mostly tomato in the jar.

      Jim, I appreciate the compliment about my step-by-step information. Look at the comment below by Barbara Dumler.
      The point is: If you are canning the newer "low acid" tomatoes then you should put some additional acid in the jar. But if you are canning the old time higher acid tomatoes then no additional acid is needed.

      Allie, as you probably already know, if you don't squeeze the liquid out you will have a jar of mostly juice and little tomato. After I also strain the liquid and can it. Thanks for commenting!

      Patrick Meehan Hi Patrick, At one point in the video I show empty jars in a pot with boiling water. I usually boil them for 20 minutes. And you are right, when we can vegetables we must do it in a way that is safe.

    When I core and skin the maters I do it over the pan that gets the meaty parts. The juice when peeling goes in the jars too this way.

      You saw me keep pushing tomatoes in the jar and the juice coming out the top. that is how I can tomatoes. I want a jar full of tomatoes, not juice.     Hello! Before I got a larger pan, I processed a few pints of tomatoes laying sideways in a pot. Do you think they are safe? They seemed to seal properly . Thoughts?

      +Talitha,cumi I never did that way before so I can't say. One thing you can do is be sure to look and smell them when you open them, if they don't look or smell right I wouldn't use them.

    I see you do a lot of canning,I have a question. I have a honeysuckle brand turkey I found in the bottom of my freezer,it is 4-5 yrs old.should I pitch it? It's not safe to can is it?

      Melissa, that is an interesting question. Here are my thoughts: 1) As long as it has remained frozen, it is probably safe to eat. 2) It will probably have what we call a "Freezer" taste. I think you could can it but I don't think it will have the taste and flavor of a fresh turkey. Having said all that, if you have the time and the jars, you don't have anything to lose by going ahead and canning it. If it turns out good, great, if it turns out bad, well you were going to throw it away anyway.

Yes Mama and Granny always did the scalding to remove the skins but then they would cut them up into a pot and boil them for about 15 minutes and do a hot pack. with the juice and the tomatoes then process them for 15 minutes. With your method you get more actual tomatoes than a lot of juice. I'm also gonna use your method for squash and okra. Thank you so much.

      The cooker is called: Camp Chef. Buy it at outdoors stores. Yes, I made a wire rack to go in the bottom of the tub, don't sit jars directly on the bottom of the tub, it may cause them to break.

      Hello Melissa and welcome to my channel. With my tub and stove setup I can process many jars faster and therefore get done much quicker. The stove is called a: Camp Chef, it is a two burner propane stove. I bought mine at Gander Mountain, but you can probably find one at hunting, fishing, and camping type stores.     That was some fast tomato picking! : ) Good idea on using that big tub for doing more jars at once. Did you have anything in the bottom of the tub to keep the jars from sitting right on the bottom? I'm down to 4 quarts of tomatoes out of my 90 home-canned quarts, so I'm looking forward to my tomatoes soon. That's some good eating!

      HChrisH200 - Haphazard Homestead Thanks for your comment! Your question: Do I have anything in the bottom of the tub to keep the jars from sitting right on the bottom? Yes, I have cut a piece of hardware cloth (which is actually wire) to fit in the bottom of the tub, which provides a small but enough space between the bottom of the jar and the bottom of the tub. If the jars sit right on the bottom of the tub it is a good possibility they will break, that is why you have to have something in the bottom of the tub.

    Old Buddy in Ala-dam-bama you said you were gonna show us rookies how much better they do when you packed the tomatoes in the jar.
    I guess that last one would have shown the difference in what not packing them does.
    Oh well old habits are hard to break, you went on and packed them anyway so I'll just have to take your word on that.
    As a boy over here in Mississippi I made myself scarce if possible when the women were canning. It was too easy for them to use me for the jar washer since my hands fit right inside, Mama put you to work if you hung around if you can understand and then without an air conditioner it was hot as blue blazes in the house. I always thought one day my wife would take care of all that stuff while I worked like my Daddy did.
    That didn't work I chose a girl that couldn't boil water without scorching it and she thought canning was stupid because her idea of stocking the pantry was throwing cans in the cart and with my hard earned money sliding them across the counter at Piggly Wiggly got the chore done. If I was home I had to carry them in the house too.
    Over the years I almost lost my love for working in the garden because she would bitch about me bringing the produce in.
    I lost my love for her and now 39 years older than when we married, I have my life back, she's gone and me and the dog are perfect room mates he don't bitch and I don't bite.

      I can easily identify with most of what you spoke about. I am 81 years old and married for 56 years, when we married my wife couldn't cook anything. I had to teach her how to cook. I had some jars of the tomato liquid that I canned a couple years ago and I thought I was going to bring one of those jars into the video, however, when I went to get it it was gone. Sometimes I don't make the video for a number of days after I do something, and that was the case here, I did the canning one week and made the video a couple weeks later. I am making the video on what I do with the left over liquid today and I can do a little comparison in it. Thanks for watching my videos.

    what type of tomatoes do you grow? They must be high in acid. I grow Cherokee purple they are delicious but not as high in acid so I add lemon juice and I add salt.

You are right, that if you are growing low acid tomatoes or you don't know if they are, then add some lemon juice to the jar. I add not as much salt as the canning books recommend, but I do add salt, actually I add one half the amount the books recommend. So for a pint I add one forth teaspoon. I like to know where my CZcams friends are located, so do you mind telling me where you live? Thanks!

      Hello Tino and welcome to my videos. The jars I recommend and use are called Ball Canning jars. The lids I recommend are also called Ball Canning lids. You can find cheaper brands, but cheap is what you get. I say, stick with the best "Ball Canning jars and lids". Why do I boil the jars after canning? That is the only safe way to can tomatoes. How long will the tomatoes last after canning? Easily 3 to 4 years. I don't know anything about canning as a full time business. _* Thanks for subscribing!     I really enjoyed learning your method of caning toms. I looked for the video on what you do with the juice after squeezing it out of the toms, but didn't find it. I've noted and watched your video on making and canning tomato juice. Is that the video you want us to watch? It confuses me, tho, because you start off with the entire tomato rather than the juice left over from your tomato canning process.

      Hello Kelley and welcome to my channel. Thank you for that good question. I can tomatoes in three different ways: 1) Can just the tomato (pushing out most of the juice/liquid. 2) Can tomato juice, but it is really the tomato pulp and juice (it makes a much better tasting tomato drink. And 3) When I am canning tomatoes only, a lot of juice is a by product and it doesn't have the tomato pulp as does the juice, and therefore doesn't have the flavor of my regular canned juice. I do can the left over (from canning tomatoes) liquid and later when I have time, during the winter, I will open the tomato liquid jars and reduce it to a sauce consistency.       The tub is just an oblong galvanized tub, buy at many hardware stores or maybe at an Amish store or online. The cooker or burners is a "Camp stove", it uses propane gas, 20 pound bottle, Brand name is: Chef, buy it a stores that sell camping equipment.

      Melody Capehart Medina Thank you for your comment, "That was fun". No, I still don't know what the yellowing is/was. I guess it is some kind of disease that kills the plant. I have now canned about all the tomatoes I need for this year. Now if I can just keep the plants alive for eating tomatoes. But I have a back up plan, I have motte tomatoes starting to bloom right now, so I should be okay, may even can some more.

      That is a good question. I didn't remember so I got my Ball Blue Book on canning out and looked it up.
      And on page 25, step 14, it says "Bring water to a rolling boil. Process pints 40 minutes, quarts 45 minutes, at a gentile but steady boil....". So, there is the answer, not my answer, rather the bible book on canning's (Ball Blue Book) answer. The old Ball Blue book tells just about all one needs to know about canning.       Now I'm not sure what it was I read the other day, but I'm glad I caught your video. For some reason I had it in my head that it was only a 15 minute boil.
      However, now that I'm thinking about it, what I read was that jars being boiled over 15 minutes after filled don't need to be sterilized, only very clean.
      We're canning for the first time this year. Our first run was some pickled radishes (not a fan). Then, 16 quarts of dill pickles. Next... tomatoes.
      I picked two big ol Lowes buckets full today, and I have at least two more ripe and ready to get picked. A lot of canning and freezing in my future.
      Anyway, keep up the great work. I'm learning a lot from your wisdom.

      Even though the jars may be clean, I always boil them before I put any vegetables in them, even if I am going to pressure can them.

    Hope y'all can help me. Every time I don't put the lids on tight the liquid from my jars seeps out into the water bath and the water from the water bath pot seeps into my jars. So I am going to tighten the lids tighter. Anyone else have this problem?

      Mary Lou: Who told you to not put the ring on tight? So, what is it that you are doing? Are you just putting the ring on loose? Did you see me tighten the ring pretty tight? The ring has to be tight enough to hold the lid tight to the jar, others wise it will never seal. Unless you are a very strong woman, I doubt that you can over tighten the ring.       Hello Blake, there is no need to add vinegar or lemon juice IF you are growing a tomato with regular acid. HOWEVER: if you are growing/canning LOW acid tomatoes, then it is a good idea to add some vinegar or lemon juice for additional acid.

      Hello bwittneyjo and welcome to my videos. I don't recommend putting any other vegetables in the tomatoes if you are going to process them in a hot water bath style. The reason you can process tomatoes in a hot water bath is because they are a high acid vegetable. Other vegetables, such as garlic and pepper are not high acid and must be canned using a pressure canner. You may see some people canning tomatoes, pepper, and garlic in a jot water bath method, but I don't recommend it.

    Sir, I'm confused. My Ball recipe says to process quarts for 85 minutes in a hot water bath (when tomatoes are cold packed vs hot packed) , which seems like a very long time. Your video stated 45 minutes for quarts. I'm new to canning, could you please advise? Thank you ! Love your channel.

      Anita: In stead of telling you what I do, let me share with you what the other sources for canning say. 1) The National Center for Home Food Preservation (current as of Feb 2018) shows Hot or raw pack, Quarts for 45 minutes in a boiling water canner or what you and I would call a Hot Water Bath canner. 2) Martha Stewart says, for pints, cold pack, process in boiling water meaning Hot Water Bath for 40 minutes. HOWEVER: I do find sources saying process for 85 minutes for whole or half tomatoes WITH OUT LIQUID. *_So, it seems that canning with or with out liquid is the determining factor_* With liquid process quarts for 45 minutes, Whole or half tomatoes with out liquid process quarts for 85 minutes.

      LCJ farms Hi LCJ, yes, I put 1/4 tsp salt in a pint jar. If you don't put in at least a little salt your canned produce will taste bland and you probably won't be able to get it tasting good.

      it's coming along it is not nearly as productive as yours but I have only been at it for about three years. Every year I learn a little more

      LCJ farms Hey Man! I learn something every year, some times its what not to do as much as it what to do. For me productivity has to do with quantity planting, meaning I plant many more of some thing so I will have large amounts to can.
      Now I am getting to an age (76) where I might begin to unlearn :-).

    I noticed you did not debubble the jars. Any reason for that? Matters or doesn’t matter?

      You saw me packing the tomatoes in the jar very tight, so no air was left in the jar. If you were canning something that has air spaces it it might be good to debubble. Thank you for watching my videos. If you haven't yet, please subscribe.

      I didn't add any citric acid. The white stuff you see me adding to the jars is canning salt. I put 1/4 teaspoon in each pint jar. If you are growing low acid tomatoes, then you would need to add citric acid. *_I only grow high acid tomatoes, therefore, I don't need to add any citric acid._* Thank you for watching my videos.     Do I need the base plate under the jars if it's just hot bath?
