  • One of the greatest Palestinian dishes is Musakhan; which combines confited sumac onions and aromatic chicken to create a dish that is deep in Umami and Tangy flavours. This dish is a big part of Palestinian culture too, as it's often used to test the purity of olive oil and the quality of each year's harvest. Being such an important dish, it's evolved into many forms and become a ubiquitous Palestinian Flavour, leading to today's dish Musakhan Fatteh. It contains layers of crispy bread, tangy musakhan & luscious sauces, to create a bite that is impossible not to love.     Makes 4-6 servings:
    Fried Bread:
    4-6 Pitta Breads
    2 Cups Vegetable Oil for frying
    Salt to season
    Pepper
    Chicken:
    1 Tsp Salt
    1 Tsp Sumac
    1/2 Tsp Black Pepper
    1/2 Tsp Cinnamon
    1/4 Tsp Ground Cardamom
    2 Cloves of Garlic
    1 Tbsp Olive Oil
    500g Chicken Breasts
    Confited Sumac Onions:
    4 Medium Onions
    100g Olive Oil - you can taste the olive oil in this dish, so make sure you use a good variety
    3/4 Tsp Salt
    1/2 Tsp Pepper
    30g Sumac
    2 Tbsp Lemon Juice - optional if you want the dish more sour
    Daqqa:
    100g Green Chillies - I use 3 different varieties to create a rounded heat level, I used Sivri, Banana Peppers, and Bullet Chillis
    3 Cloves of Garlic
    30ml Lemon Juice
    30ml Olive Oil
    Tahina sauce:
    500g Yogurt
    50g Tahini
    4 Tbsp Lemon Juice
    1 Clove of Garlic
    1/2-1 Cup boiling water
    2 Tsp White Vinegar
    1/2 Tsp Salt
    1/8 Tsp Cayenne Pepper

      I’d also say mushrooms like oysters, shredded trumpets, maitake or of course if you’re in a place to forage chicken of the woods!
      Or alternatively any kind of vegan mock-chicken, soy curls, Meati mushroom root cutlets

    There's a Lebanese restaurant in my hometown, and I credit living and feasting with other cultures as my early education against xenophobia. Fastest way to the heart is thru the stomach!

    My partner and I cooked this last week. It was delicious, but also very emotional. I had recently seen a news story about how limited the food was in Gaza- the reporter was showing them cooking palm-sized flatbreads and eating it with za'atar, which was all they had. It felt as if my partner and I, safe in our home, were cooking and eating the food that they should have been eating. Many thanks, Obi- not only for the wonderful food (we've cooked many of your recipes and they've all been incredible), but for using your platform to raise awareness about the plight of the Palestinian people.

    We made Palestinian Fettah many times. And we're Egyptian/Lebanese. This dish is on a WHOLE NEW LEVEL of flavor. We don't usually use chicken though. We use minced meat + eggplant

    I am an Ashkenazi Jew whose grandparents fled the pogroms of Russian Cossacks to settle in NYC. I love Palestinian food and am learning the recipes in Sami Tamimi's great cookbook, FALASTIN.
    This Musakhan Fatteh looks wonderful and would make a lovely holiday dish. Sumac is one of my favorite spices; I often use it on salads and In sandwiches like Avocado Toast. The nut and pomegranate topping, sprinkled over tahini yogurt (which I'm familiar with) and that green chili sauce (which I'm not very familiar with) looks so festive!
    If I wanted to make it vegetarian, what if I used mushrooms and eggplant (my favorite vegetable) instead of the chicken? If so, do you have any suggestions as to what kind of mushrooms? And maybe a green vegetable, too, like collard, mustard, and/or dandelion greens? Not that I have anything against chicken, but I'm always looking for ways to use mushrooms and eggplant.
    This could be the dish that I break in my air fryer with; I hate using so much oil! Maybe you could suggest some side dishes, but it really doesn't look like it needs anything more than a flavorful tea. Any tea suggestions?

    thank you for showing off this recipe and sharing palestinian cuisine! with what's going on right now, the only thing many of us can do is hope and pray the people are doing okay, so it's wonderful you're using your platform to showcase their culture to the world. these are very real people with a very real right to live life, and the apathy and malice towards them is heartbreaking. you, however, are showing the world many reasons why we should care about them, about what's happening to them. i've been interested in making middle eastern food for a long time now, and this channel is probably my gateway into finally cooking these meals. here's to keeping the culture alive and beating! 🍉🍉🍉

      There are Lots of Palestinian dishes you can choose from, but if you REALLY want an authentic Gaza dish look for "Sayadiyeh" or "the fisherman's dish" which is a Rice, Onions and Fish dish that is authentically Gazan which has long tradition of fishing. You can thank me Later .. 🙂

      @@MiddleEats Oh it probably is the same as the Egyptian kind .. The only thing I would expect from the Gazan version is a bit more hot spices than the Egyptian or Lebanese versions because Gazans are quite famous for liking spicy peppers.

    Wow, this dish is packed with so much flavour and textural variety, it’s pure joy to eat! It takes a little bit of work (I made the pita‘s from scratch also) but holy moly this is absolutely delicious! First time for me to try Sumac. We’ve had a jar of it in the drawer for months now and I was looking for a good way to use it. Your recipe inspired me to give it a go (and I used the whole jar up straight away lol).     I married my beautiful Palestinian husband and lived with him and his family in Jordan for two years before we moved to Netherlands for his job. During this time, I had the privilege of being taught traditional Palestinian cooking by my 76 year old mother in law and many sister-in-laws, including this delicious dish. Cooking and food is such a beautiful and major part of the culture. It’s not a quick, convenient means to an end like in the west. All of us women would get together in the kitchen, mostly on the floor (covered in a plastic sheet) and prepare every ingredient by hand before even getting to the actual cooking, even small things like milling our own pepper, pickling fresh olives, making our own tomato sauce by squeezing and mashing tomatoes by hand etc . We would sit together for hours in stations, each with our own task, talking, sharing, laughing and reciting Qu’ran. Then sitting down with the whole family to eat (his siblings and their families lived in the same street) almost every single night. Moving back to a western country after two years was honestly incredibly difficult to adjust. Insha’allah I will go with my husband and his family back to Fallastine when she is free 🇵🇸❤️❤️

    I love your recipes! could you maybe upload some more palestinian vegetarian recipes (that's not hummus or falafel)? I would love to cook something for my friends from Gaza, but they are vegetarian, and all the recipes I find are heavily meat based :(

      That's so lovely of you. We did a Palestinian breakfast a while back and most if not all of those recipes were vegetarian. A big family breakfast on the weekend is a HUGE deal in the Middle East, so maybe that would be perfect to make them feel loved?

      If you comb through his Christmas video, you'll find a Palestinian cauliflower bake which I think is up your alley. Looking through his other videos and comments, meat is easily substituted with other veges or legumes like cauliflower, eggplants, chickpeas, etc. Either that or you can just swap the meat out for replacements like tofu curls or vegan sausage.

    Hey Obi, been watching for a really long time since you started out, took a long break from cooking youtube and did other things, but coming back, I can say your videos have improved so dramatically. From the camera work, the background music, and the voiceover. It's all much more polished. Great work.

    This might sound crazy but this dish tastes so good that I almost don't want to eat it, it's just so rich in flavour that one bite is enough to satisfy me. It really is a beautiful dish, probably one of the best I've made. Every ingredient works together so well. It took 4 hours to make but was worth it.

      I also eat whole plant food, but occasionally I do use a processed food. I'm going to try soy curls as a replacement to the chicken. This looks too good not to try it!

      this dish can be customized to your hearts desire,i usually use fried vegetables like eggplants and cauliflower instead of the chicken

    Musakhan is really similar to a historic English recipe I make all the time! Really fun to see how different cultures make something so similar and yet so unique. Def going to be adding sumac to my white chicken pottage

    that looks delicious, it’s a shame i can’t have most of that because of dietary restrictions, but it looks like i should be able to have sumac so it would be fun to try to make something inspired by it using foods i can eat

    I’m so glad to be subscribed to this channel. I found you recently as I love Middle Eastern cuisine, so the tragedies happening right now need to be talked about if we wish to enjoy their culture.     Brilliant new version of Msakhan❤ since its not the original recipe, i recommend you add a pomegranate molasses into the chicken marinade or even for a decoration as the colors should be wink wink 😉

    I've made this twice from a recipe in Palestine on a Plate by Joudie Kalla - with vegan chicken. It's so good and surprising! My heart breaks for Palestinians and the olive trees.

    thankyou I recently purchased sumac because of many dishes that recommend this spice, i followed your recipe it turned out good👌though i love olive oil but i used very little oil to make it less calorie dense , i am sure with the amount of olive oil that u used it must be phenomenal, just wondering if sumac has so much red pigment or there is a chance that it is adulterated with red food color??

    To get personal, I'm a diasporic US Jew. I staunchly support and side with the Palestinian people, both as a human being with a conscience who refuses to take propaganda uncritically, and indeed *because* I'm a Jew. Our tradition strongly emphasizes the importance of justice, fairness, and "repairing the world." That our ancient yearning for being truly safe and love for our ancient history has been twisted by people enacting colonialism, murder and rape, and serving as mercenaries for the cruel imperial interests of western powers sickens me to the core. It's from learning our history of being killed and exiled and robbed that I vehemently oppose that same oppression visited on anybody else, ever. People who share my religion and my tribe do not get some special exception.
    Despite strife and separation, the sons of Abraham were brothers. One day, G-d willing, let B'nei Yitzakh and Banu Ismail truly be siblings again.
