You are close on the recipe. The old-school recipe was tarragon vinegar not Apple cider vinegar.
If you want a good bake potato take a idaho potato and cut it in half. Put it in boiling water on the stove cook for 30 mins with lid on the kettle. then drain the water off. Put butter and sour cream on the potato and yum yum so much better than Baking it.
I worked for KFC in 1997 - 2000 and this looks just like theirs except we added chopped white onions into it. People swear it doesnt have onions but I assure you it does.
I made this the other day and OMG!! The taste & aroma are EXACTLY like KFC's! It was ABSOLUTELY DELICIOUS!! This MUST be made 24 hours in advance! NO getting around that!! I followed the recipe to the letter. I used 4 Cups of chopped cabbage & carrots combined. After I added the wet ingredients to the slaw ... it looked dry. This is deceiving. DO NOT ADD ANYTHING ELSE!! The 24 hour wait will correct this with the cabbage exuding its' own juices. THIS RECIPE IS A TOTAL WINNER!!! 🏆 Thanks SO much for posting it!

Greetings! KFC cole slaw has always been my favorite, I could eat the whole family size container! I did a buttermilk facsimile years ago and it tanked. My attempt at your recipe was nearly spot on for me! I don't think one can ever get an exact taste...every mayo, onion powder and even vinegar can have a slightly different taste that impacts flavor. However, this is the closest ever achieved in my kitchen and I think it will overtake my personal recipe for at least the summer of 2020 bbq season! Thank you so much!

If you want to get the flavor even closer to KFC (i know it’s hard to imagine) instead of 1/2 tsp. of black pepper, use 1/4 tsp. of white pepper. Believe it or not, it makes a huge difference, not only in taste, but in the look as well. Try it once and you’ll agree.

About + 35 years ago KFC coleslaw was made by dumping a prepackage pre chopped bag of coleslaw, onions, carrots etc. The dressing was in 1/2 gallon containers; like milk. No chopping, no making dressing from scratch. Open bag pour into large white bins add 1/2 gallon of dressing per batch size you needed to make. The real secret is that when scooped into individual or family containers they were place upside down so the flavor of the dressing was right on top. So when done making your coleslaw; put it in a tight sealed container and place it upside down in the fridge. Do not flip until the entire meal is at the table. enjoy 😁

At the KFC I worked at 30 years ago (dang I’m old now) we still quartered the cabbage, onions and carrots and shredded them in store. Mother’s Day and all of the summer holidays were massively busy and I’d have to make at least 100 lbs.

I made this to go with supper last night and we loved it. Very simple recipe. Not having a food processor available I shredded the cabbage and carrot with a standard box grater and it worked just fine. The dressing is the great part, with the sugar balancing out the acidic part from the vinegar to give that sharp tastiness. This recipe is definitely a keeper.

Glad I found your video. I just love KFC's Cole Slaw. I made BBQ Pulled Pork in my Instant Pot today along with your recipe for the slaw and it was super delicious. After I mixed everything, it did taste a little too sweet and not enough of the ACV came out but a few hours after refrigerating it all balanced out. I did use chopped onions rather than onion powder. It was worth the effort, in my opinion. Thanks so much.

Omg this was amazing!!! I was looking everywhere on youtube and tiktok for recipes!!! This was the best ! I did everything except I did add some purple cabbage and for my mayo I did half cup miracle whip and half cup of primal kitchen real avocado mayo. Wow!!!! Tastes just like kfc!!!!

I lived in West Germany for drei Jahren in the 70s and 80s. I was a US Army soldier stationed in Giessen in the state of Hesse just north of Frankfurt.
One of my favorite restaurants downtown was a Knochen ( Bone ) Haus called " Der Pferdestahl " . They served the most delicious slow smoked pork ribs.
I would always order a big plate of Knochen mit a side order of Kraut salat. The Kraut salat they served was what Americans would call cole slaw.
Naturlich I would also ask for Ein Bier Bitte .

I made this with Stevia instead of sugar & Olive oil mayo and my husband loved it. Thank you :) I used to work at KFC back in the 80's, the cole slaw always came pre-packed in huge buckets from the main office (Pensacola Fla) where they made big batches of the stuff.

Where I worked (30 years ago) we started with whole veggies, had to quarter and core the cabbage, peel and quarter the onions, peel the carrots then shred them with the Hobart machine. In the summer it was common to make at least 100lb for the weekends. Also when we would have to make the dressing from scratch due to being out of the ready made stuff we used tarragon vinegar, that’s the only ingredient I 100% remember, I can’t remember if we used miracle whip or mayo.

Thank you for the recipe! I did it but change the recipe a little because we are on a diet 😩, so I put it yogurt with out sugar, insted of mayonnaise, and I put just 1spoon of mayonnaise and a teaspoon of substitude sugar and the rest the same, it turn out to be delicious!😍💕

I worked at KFC back in the 80’s , and never used milk or buttermilk. Your ingredients are spot on,the amounts may very. But I do remember we used KRAFT mayo and it was really simple to make.

My boss at a country club had a copycat recipe. I made it every week. We used a coleslaw cabbage blend, salad dressing, sugar, vinegar, celery seed, special salt n pepper blend. It was great!

I was taught by a guy who was raised in a boys home in ID back in the '70s I think. He worked in the kitchen. Chop cabbage, carrot, onion, miracle whip, (Clausen) pickle juice, salt & pepper. Let sit overnight. Identical to KFC flavor.
Watching because oddly enough my kid made cole slaw without onion. She said every recipe she looked at didn't have onion in it. She only "allowed" me to make it occasionally because she didn't like it. Well, hers tasted bleh, no flavor. I told her she needed to mix together 24hrs ahead to, but she didn't listen. I told her I'd probably rinse off the "cole slaw" (barely any dressing) & stir fry it with chicken. She wasn't happy with me.

KFC has also changed this. It used to be quite a bit different and the consistency in the way they used to make it was probably using a cream and butter milk base now they’re using kind of an egg and soy bean oil base which is like a mayonnaise. It taste very different if you go to KFC and buy it now and you’re a true lover of their original it’s just not nearly as good it’s just OK. Make it with the buttermilk mix or even better yet follow with the French would do and use heavy whipping cream, instead of all the Apple cider vinegar use white wine vinegar which works better with the sugar your profile or a sweet profile and lemon juice. I would say a tablespoon of each. I also think the way you chop the cabbage and how they do it makes a huge difference you’re getting way more of a dressing to cabbage ratio and that will make a huge difference in the way it tastes. The good part about it is if you use a good healthy artificial sweetener and go with the heavy cream you’re creating something incredibly healthy as opposed to the mayonnaise which unless you’re buying a very expensive mayonnaise with something like an avocado oil is just horrible nutritionally and full of carbs and inflammatories and the things that damage the fat cells and give you a coronary artery disease and all of that so going back to the old style with the more buttermilk base or the cream base with The vinegar and lemon juice which is basically what buttermilk is and using a sugar alternative it’s going to be a very healthy food and I think you’ll get a lot closer to that original taste. The mayonnaise version will probably taste more like the current KFC which most people are disappointed in when they go and eat it now it’s definitely not the same as it used to be over the last couple years they seem to have changed it and probably six or eight years ago they made a pretty huge change and their quality is definitely gone downhill. But the best flavor profile from KFC is going to come from the very finely chopped cabbage a cream base with the vinegar and sugar. Also adding a little paprika and celery seed and maybe even a little bit of mustard powder will really give it that Old KFC flavor which is what people really love. I find the mayonnaise-based, especially with the soy bean and canola or corn oil mayonnaise to be more greasy and it was much more of a creamy sauce before.
Awesome recipe but I halved the sugar and used miracle whip dressing instead of a real mayonnaise.
Used it to top some pulled pork burgers.

@@Getmytips I came back to rewatch your video before I mix up the slaw sauce tonight. I thought I had onion powder but it turned out I have
dehydrated minced onion. I will use 1/4 tsp of those. I am type II diabetic but i will try your 5 tbsp of sugar for my first try. In future I will experiment with
using Stevia extract as a sugar substitute. I plan on using a small carrot I will chop separately in my smaller chopper. I will let sauce sit in fridge overnight as you suggest. Oh I also subbed and rang the bell.

No I have not used a sugar substitute. In fact I never use sugar substitutes because of the effect they have on my brain! Nevertheless, the video is a demonstration of exactly how Kentucky fried Chicken makes it. If you want to make it some other way it will probably turn out okay, but it won't be identical to the coleslaw you get at Kentucky fried Chicken.
I always thought there was a little bit of horse radish in it. I think it would be good!

What brand of mayo did you use?
Melody Wilburn, use Hellman's mayonnaise, but it really doesn't make that much difference what kind of mayonnaise use. Essentially the taste of the mayonnaise is masked by the other ingredients. So you can always go with the low price stuff. Mike ☺
Reduce the sugar from 5 to 2 table spoons, add 3 table spoons of white vinegar and its perfect. my ratio is 5 cups of cabbage and 1 carrot, also can add half green apple shredded..

No milk or buttermilk at all? I've seen several other recipes that use one, or even both.
BobMobber, Yep that's true but that doesn't make them correct. 50 seconds into our video we list on a blackboard the exact ingredients we got from the KFC official website. Nowhere in that list of ingredients will you find Buttermilk. I recommend that you try our recipe exactly like we did it on the video, and let us know how it turns out. FYI, we did a blind taste test with volunteers, (neighbors) and no one could tell the difference between our copycat coleslaw and the official KFC coleslaw we got from our local KFC.

The mayo and vinegar cause the mayo to breakdown into what looks like milk. I’ve been making my version of coleslaw exactly like this for over 35 years. Taught to by my good ol mom. The only thing I don’t use is onion, which I never thought of. Skip the prepackaged coleslaw mix and chop your own. Much better texture. I also use some red cabbage to jazz up the color a bit. Ticks off my wife’s friend that mine is better than hers, all I tell her is it’s in the sugar baby! :D

Seems like too much carrot used here; KFC slaw doesn't look this orange. :-D And I think fresh onion would taste much better than powder but, other than those two things, the recipe looks pretty good. Thank you.

If you think about it, having to add milk is not practical for mass production in a franchise situation. My guess is, that's probably why the recipe was set up originally without using milk, Mike
