Canned pumkin puree virtually doesn't exist outside of the USA so we would love to see! Most guides tend to leave out the straining part, so without it, it would end up too soupy.
Hi Trista-I quarter a 6 to 7 lb pumpkin, them I clean out the insides and steam the quarters an hour or so. Let it cool and remove the rind/skin, then I puree with immersion blender.

I would love to see how you would prepare pumpkin purée from fresh pumpkin. I have done this in the past and I have noticed it’s difficult to get all the water out to get it the same consistency as that in a can. I always used neck pumpkins because I felt like they were a “meatier” variety. I would appreciate knowing how to do it to have less water in the purée. I also put your cookbook on my Amazon wish list for Christmas ~ hoping to receive it from one of my kids! 😀
Hi! (not John, here but I have your answer). Strain the fresh pumpkin puree for a few hours. Using a fine mesh sieve, place your fresh puree into the sieve and let it sit over a bowl to catch the liquid. Depending on the water content of your pumpkin/squash, you should see 1/4C (or so) of discard liquid per full cup of puree. I do this the day before or early morning of - but count on at least a few hours.

Yes!!!! Would love a video on how to get your fresh pumpkin puree the right consistency. We grew Long Island cheese squash this year. I have processed 2 so far and got 10 16oz portions that I have frozen. My puree does seem a little more loose than what you buy in the can. I thought when I thaw a bag out to use, I would pour some of the water off when it was still half frozen. Then , of course my weight measurement will be off...so absolutely do a video on processing fresh pumpkin.

I made these over the weekend I ended up using Pure Pumpkin and I used all spice instead of pumpkin spice they were so good; my family loved them they were all gone in 24 hours!!
I am vegan so i will never take part on animal abuse this way. Plus i live in Greece in a village so i won't be able to find more than half of the ingredients to even attempt a vegan version. That means i will never experience YOUR recipes (with the obvious pros and cons of supporting your creativity practically). Your videos are my favourite baking videos though cause they are just so damn relaxing. I love preparing pumpkin pie for Thanksgiving but i use Salvadoran Ayotes (from the pumpkins' family, but not orange ones). And you can't find pumpkin puree in cans easily over here, and when you do, they are ridiculously expensive. If I am to try baking your other pumpkin recipes I believe it would be awesome to be able to make my own pumpkin purée. Got the cookbook, hopefully it arrives before I do my grocery shopping! I will say one thing I noticed about the cookbook looking at it online, there are some recipes with ingredients that are just not at all commonly available to anyone who isn't high middle class, which significantly limits the audience. Something to consider for future cookbooks!

Hey, I made your pumpkin cake and it was easy and delicious and really pumpkiny. I did not have all of the right ingredients so I had to sub some butter for oil and sub some of the spices because I ran out and almond ex for vanilla and it was still delicious, really moist and flavorful. I added just a touch of garam masala. Even though I could eat the whole cake myself immediately I try not to, so I cut it and freeze it in a plastic container or freezer bag. I just take our a serving and leave it out about 5 mins and it is perfect for the tea party. Love your vids.

Hi, what I did with my fresh pumpkin puree was squeeze out the water with a cheese cloth! Works wonders :))
