    HOT SAUCE IS RED SO THE CHICKEN WILL BE DAAARK!! DAMN yall would know this if u knew how to cook as good as u complain. Man u are all sad. She cooks waaay better than most and a lot of u act like she screwed up an easy ass fried chicken recipe when those of us who actually decided to be the cook and not the lazy one in a household that cant hold their own in a kitchen u would realize how well she made this chicken. What is wrong with society? ITS FRIED CHICKEN not boiled throw it in a soup chicken....its suppose to be hella crispy. I cant believe i got mad about this but it is an insult to amazing cooks/ chefs when a bunch of amateurs start hating on your food that u put a lot of years and tlc in to perfect. Its Rude.

      NaNazLiLNuBz I'm with you on that! My grandmother made it similar to this. She liked it extra crispy plus it's the paprika in the flour that gives it that darker tone. Some add it to the buttermilk rather than flour to avoid this and make it more golden. I prefer her way better. I like my flour seasoned like my grandmother made it. Oh & she fried it in lard!

    Since I don't like the flavor of hot sauce, I'm going to sprinkle chili powder and a few other spices into the buttermilk to give it lots of flavor (similar to what you did). I'm cooking this today. I'm so excited to try this! I could hear the crunch when you bit into it. It looks absolutely delicious! Thanks for sharing this video!

      So I finished making the fried chicken. It was probably the easiest and shortest time I've ever spent making fried chicken! That was awesome. The only thing I would do is take off the skin. I made it with the skin but I don't usually like any skin on meat so I followed your idea but I still prefer it without the skin. I really enjoyed this recipe Laura! I cooked a 5 pound pack of legs and it was really delicious. I also re-dredged the chicken into the flour after it sat for about 20 minutes after dredging it the first time. I only had coconut oil and I used that. I always use coconut oil when cooking and you can never taste the difference (when cooking) but it's just expensive. If I had some other oil on hand, I would have used that. :) I had to cook it longer than the 15 minutes in the oven, though. Maybe my legs were bigger than yours.... It was so delicious and tender! Thanks again, Laura. This is my new fried chicken recipe.

    7/8/20 made your chicken today after making your eggs Benedict for Breakfast-they both turned out PERFECT!!! I love everything you do. You are a fantastic teacher. You have little things hear and there that make a HUGE difference. I’m 53 years old, I’m Italian and I have never cooked this good. Thank you Laura. Biscotti and gnocchi also PERFECT!

    Love Laura Vitale! The execution is spot on. The only addition I would make is to actually season the chicken and then submerge it in the buttermilk. There is no amount of seasoning you can add to the flour that will season better than season the chicken itself as well as the flour.

    This is my third new dish I am trying since yesterday, because I found laura vitale on Friday, and by Sunday I have tried her 4 recipes. And all of them came out so so so delicious and exactly they are suppose to be. I am so happy she have allot here on youtube. I will try all of them one by one.

    I always use boneless chicken breast for my fried chicken and it is soo good when i do it too. I live in the south where fried chicken is a staple of our cooking.

    Made Laura's Spicy Chicken tonight. Sriracha and buttermilk. Marinated overnight. Looked like yours when it was done. I let the air juge around. Tasted great. Made four pieces so I would have some for tomorrow. Ended up eating it all today. Love your video's. Helps that you are good looking.

    I actually made these today - it works! My boyfriend loves them, which means a lot. BUT: Do be careful with moisture dripping onto the hot oil! I am telling ya!

      I made it and it turned out good- I thought he Sriracha sauce flavor would carry over more into the finished product- I didn't notice it much actually. The chicken was very juicy and tender yet crispy. I will add spices (salt and pepper) on top of the chicken before the bake next time though to have a little more flavor at the end though.

    Making these tonight...one batch will be in my Philips Air Fryer, another batch will be in my NuWave oven (essentially air frying it as well) and the third batch will be in my multicooker that I'll be low-frying it and then baking it after.

    Haha! When I first saw the burnt chicken :) it's a good recipe though, the marinade was a great idea and very simple. And we've all burnt chicken before. I think the comments are right about just using deeper oil.

    why do u cook it in the oven?
    when i first made fried chicken i also used a pan to deep fry and they came out golden brown and crispy, they were fully cooked inside

      I think it's because her oil is too hot to begin with. I agree; you shouldn't need to finish it off in the oven, and if you look close, the skin was slightly charred black in some areas when she took it out of the oil.

      +Maria Kazakopi Agreed. Her oil is too hot. I heat my fat to 350 and when the chicken goes in the temp always drops to about 300. I fry it for a total of 18 minutes at about 300 degrees and it comes out perfectly. I've always heard that if you fry at lower temps it will soak up oil. That has not been my experience.

    Buttermilk is basically vinegar and milk used to make the food moist and delicious. It is also used in cakes :) I know what your thinking , "why is there no butter." Whoever invented the name was probably high or something. Laura makes her own buttermilk and there's a recipe for . :) Keep on cooking. :)

      The best way to warm up chicken is to wrap it in foil and place it in the oven at about 275 degrees until hot. Do not microwave it. That makes it tough and dry.

    Buttermilk is just another kind of milk. Most grocery stores will carry it, right next to all the other milks. If you don't have it, you can make a substitute by adding 1 tablespoon of vinegar or lemon juice to 1 cup of regular milk.

      You can make your own buttermilk by adding 1 tablespoon of white distilled vinegar, cider vinegar, or lemon juice to 1 cup of milk. Just stir the vinegar or lemon juice into the milk and then let it stand 5 to 10 minutes before using.

      +Fatima Siddiqui use it in cooking other foods like curry. Or primarily use it to fry snacks. Dont throw away and waste it. To clean the oil, sieve it, and fry potato skins. i read it somewhere in an expert forum, but did not try it.

      Its milk with a Little bit of vinegar. It thickens and curls after 5 min, and its used to tender meats 😉

    Tips to convert the measures on your head:
    - 1 pound (1 lb) is about 450 grams. So if you need to convert N pounds to grams, either you multiply 450*N or multiply 500*N then subtract 250*N. For instance, if a recipe has 5 pounds, you need to do: 500g*5 - 50*5 = 2500g - 250g = 2250g.
    - Fahrenheit to Celsius: subtract 30 from the ºF temp and then divide by 2. It's gonna give a close estimation, the real formula is subtract 32 then divide by 1.8. For instance, 400 ºF ~= 400 - 32 = 368 / 2 = 184 ºC.

    Just buy from KFC, cheaper no need to clean up no grocery, and delicious. I mean you are not gonna be eating everyday so buying from KFC is ok for your health too.

    Finishing baking is not necessary. Just brown on one side, cover, turn down low, cook for 10 min, uncover, turn heat back up to starting point, brown that side (this is still on the 1st flip of the chicken), flip back to the original side and crisp this side up (it will have become soggy) but no worries it will have a wonderful crispiness. I also recommend a little corn starch in the flour. For the ones who don't like hot sauce. 1/2 c kosher salt is good too or about 2 tbsp lawry's salt

    Laura is the BEST. It's always gratifying when the cook does things the same way that you do. I use 1 tsp. of corn starch in the flour mix. I believe that it helps everything to adhere to the meat/chicken. I use peanut oil for any chicken application. This recipe needs lots of counter space for the cookie tins but every inch is necessary.

    YAY! I love Laura's videos!! I want to tell you guys that you CAN successfully fry boneless skinless breasts (with extra steps) using this method. Brine it, air dry it until tacky (obvs don't rinse off brine!) Then do what we call a "dry-wet-dry-fry". In one bowl make a highly seasoned flour/cornstarch dip and then in a another bowl an egg dip with a hefty splash of your brine. Dip dry, dip wet, dip dry (let sit for 15 min) then fry nice and hot at 350-360. Thick pieces will need a lid on the pot for 3/4 of their cooking time about 6-8 min ea side. Your breading will stick to your chix and be crunchy AF! Works awesome for any smooth surface bland shiz you wanna fry like, say tofu or cod.
