Potato dough donuts with cocoa and cinnamon.
700 g semi-coarse flour
600 g of potatoes boiled in their skins
50 g of butter
42 g of fresh yeast
3 teaspoons of baking powder
200 ml of milk
1 egg
2 yolks
50 ml of rum
1 pack vanilla sugar
4 spoons of granulated sugar
rind from one lemon
Yeast - mix yeast, a pinch of sugar, 3 spoons of lukewarm milk and 3 spoons of flour.
Leave for 10 minutes.
Melt butter, sugar, vanilla sugar in hot milk.
Mix 1 whole egg and 2 yolks into lukewarm milk.
Add 1 teaspoon of salt and 3 teaspoons of baking powder to the flour.
Add the milk mixture and flour to the sourdough.
Grate potatoes, lemon zest and add rum.
Process the dough for about 10 minutes.
Leave to rise for 1 hour.
Roll out the dough to 1.5 cm and cut out small cones with an oiled cup.
Cocoa sprinkles - sift 3 spoons of cocoa and 4 spoons of sugar.
Fry the donuts on a medium flame.
Sprinkle cooled donuts with cocoa powder or cinnamon sugar.
