We've been getting our hands dirty in the kitchen making vegan cheese lately, our newest recipe is for Vegan Mozzarella. This is incredibly true to form and some of our staff couldn't tell the difference. Give it a try and let us know what you think!

Mozarella:
- 100 g cashew nuts
- 200 ml water
- 1 tbsp nutritional yeast
- 1 1/2 tsp apple cider vinegar
- 1 tsp salt
- 1/4 tsp garlic powder
- 3 tbsp tapioca flour
Brine:
- 400 ml water
- Pinch of salt

I made this but used 200ml coconut cream (for the fat) and 100ml of water, and added a tad more salt and also lemon to balance out the coconutiness.... ummmm wow. Literally the best vegan cheese I have ever had. So amazing guys thank you!

Amber Raglin I made it the same way with 3/4 cup coconut cream (the thick fatty portion of coconut milk.. it will separate inside the can & you can scoop it off the top) and 1/4 water. Added a tiny bit of extra salt and extra ACV. so so so good!

Guys, I just made this and im telling you if you're skeptical, dont be. I made a caprese filled bagel with this cheese and its really good. Has a nice cheesy flavor and the texture is close to dairy mozzarella. Try this. You wont be disappointed!

stefanos2691 it kinda melted but not like cheese..I fucked up the recipe somehow though because mine didn't turn into a ball ...I think I should have doubled the tapioca starch, the one I used may not be as starchy I suppose

I cannot thank you two enough for this recipe! I moved to China a year ago and I feel like I'm the only vegan here! I can't buy anything like vegan meats or cheeses so I have to make everything from scratch. I just made this recipe today and it's AMAZING!!! I'm so excited to make it for our pizza from here on out. I haven't had cheese in a while, but my husband who eats cheese loved it. It tasted rich and salty like cheese to me and was awesome on pizza and bruschetta. Definitely make it!

Faith VanderMolen just a suggestion but ask locals about options. Most ingredients are from Asia and then the hipsters find it jacking up prices. Buddhist originated Seitan. I find tapicoa flour, vegan soy meats, tofu and young jackfruit for just a fraction of the prices they charge at US based grocers. Good luck though
I just made this and wow... It's so good! The use of brine at the end was brilliant. I was able to slice and layer it in lasagna and it melted and browned so nicely on top. Thanks guys! Your recipes are fabulous and I can't wait to try another!

I made this and it was AMAZING!!!! the one thing i missed about being vegetarian was being able to have panera bread modern caprese sandwiches but this was super close, i loved it. i also used sun dried tomatoes. YUM

I just made this and wanted to inform everyone that this is probably the best recipe out there. This was really good! The best mozzarella recipe I've tried. In fact this is better than all the store-bought vegan mozz I've tried. Give it a go. You wont regret it.

This is the best cheese ever- vegan or otherwise. My husband and I loved this recipe so much.

Amazing mozzarellas turned out. I didn't have tapioca starch and I had tapioca pearls. I ground the pearls into flour and added 1 tbsp of tapioca pearl flour + 3 tbsp of cornstarch as you recommend in the comments below. They turned out amazing, I added very little garlic. Also the recipe is very economical - I made 5 vegan mozzarellas and with fresh milk for the same money, only 1-2 mozzarella comes out. I am very satisfied - well done to you, congratulations and for posting such delicious recipes! Thank you for your recipe, brothers! I wish you success and health!😊
Great recipe, do you know if we can use other nuts? Like brazil or walnuts? & is there any way to substitute the tapioca? would wild rice flour work?

Wow ! I have tried similar mozzarella recipes before but always found it very difficult to work with... the tip about putting it in the brine to be able to slice it looks amazing, I will definitely try your guys' recipe next time I make pizza :D

Store bought vegan cheese is just so ridiculously pricey and making it as affordable as you have here probably even beats out the dairy-based alternative! I'm looking forward to a sharper, more cheddary kind of vegan cheese recipe! Nutritional yeast just doesn't have the right kind of bite.

Made it a second ago and it's Aaaaaamzinggggg! Of course , I decided to make a double portion... the stirring was a bit crazy but so totally worth it. And the smell is so good, yum yum. Having it on homemade vegan burgers and the kids are loving it. Thanks guys!

hi, I have a nut allergy and I just made this with sunflower seeds instead. my consistency was a bit musher than yours. I'm wondering if it has slightly different macros than cashews and if I need to add more tapioca. also how many minutes would you say it takes to stir on the stove top to get it to a ball stage? I couldn't find that in the video.
Just made this, I did a double quantity not realising how much it makes. It tastes delicious and is now on pizza in the oven and I've enough left for another two pizzas!
This recipe is sensational, really. The only thing that I have to say is that I would reduce the garlic powder a bit, for me it tasted almost too cheesy for a mozzarella!
