    Recipe:
    Step1:
    3 lbs. chicken gizzards, cleaned and diced
    3 lbs. chicken hearts, cleaned and sliced
    1/2 cup white vinegar
    1/2 cup sour orange
    Enough water to cover (approx. 6-8 cups)
    A bowl with a cover to soak at least 1 hour.
    A pressure cooker or stockpot to cook and tenderize.
    3 bay leaves
    2-3 leaves oregano brujo
    2-3 leaves oregano fino
    1/2 cup all-natural apple cider vinegar
    1/2 cup sour orange
    1/2 cup sofrito criollo (Sofrito: • How to make a Small Ba... )
    2 1/2 tsp. adobo casero
    2 Tbs. sazonador casero
    1 tsp. freshly ground black pepper
    2 Tbs. minced garlic or Garlic Paste: • Unbelievable Secret to...
    3 Tbs. oil of your preference
    6-8 cups water to cover
    1 tsp. Himalayan salt
    Step 2:
    Green cooking banana
    10-12 bananas (1-2 bananas per pound of gizzards and hearts)
    1 Tbs. Himalayan salt
    Enough water to cover
    Step 3:
    Cooking pot
    1/2 cup extra virgin olive oil
    2-3 bay leaves
    2 cups sliced yellow onion, 1 large onion
    1 cup cubanelle or red and green bell
    1/4 cup sliced olives
    1 Tbs. capers
    1/2 cup white vinegar
    1/2 cup sour orange
    2 tsp adobo casero

    2 cup gizzard cooking liquid

      Hello Sean, thank you very much for watching and for the support. I use sour orange juice in my recipes as a replacement or supplement to vinegar although I make all my vinegars I love the flavor that the sour oranges add to these kinds of recipes. Sour oranges are available in Walmart, Publix, Shoprite, and most Hispanic, Asian, Jamaican, and Indian markets. Amazon carries it however their prices are outrageously high, I would not pay more than $2.50 US. Here's the link for Amazon as reference: amzn.to/3uunQGGMy favorite brands are Badia and Goya both of these brands sell 100% sour orange juice.     Can i use plantains *instead* of bananas for this? Or do you recommend only using bananas?

      Hello, I recommend bananas, the cooked bananas give the Mollejitas a thicker consistency due to their starch. You can use plantains, however, the plantains are dry and do not thicken the Mollejitas the same. I hope this helps, God bless 🙏
