    There's something so darn Chistmassy about the Harry Potter films, particularly the first few, that I always thought of them as Christmas Movies, even though maybe they're not. Well I'm kicking off this holiday season with a hot mug of cheer with this 1588 recipe for Butterbeer. I know there's a ton of nonalcoholic recipes out there for Butterbeer and those are fine, but honestly, I think this is more in line with what J.K. Rowling had in mind when she wrote the books. For starters, the kids need to grow up from Pumpkin Juice to Butterbeer, implying there's something more mature about it. Secondly Europe and the U.K. are a bit more lax in regards legal drinking ages, and I'd imagine wizards even more so. Thirdly, Butterbeer is an actual real thing, found in a Tudor cookbook from 1588. Was J.K. Rowling specifically referencing this recipe? I can't say for sure (unless she wants to answer!) but I CAN say that I was shocked to discover that Nicolas Flamel was a real person, who wrote a book on alchemy and the creation of the Philosophers Stone. They have copies of it at the NY Public Libary reference branch, rare books section. So, she wasn't strictly making things up with these books. So, this Butterbeer as the official Wizards Butterbeer? Maybe.
    Making this episode was the first time I'd made butterbeer, and I'm just gonna be frank: I loved it. This stuff is incredible, though perhaps best in moderation since it's not far off from pancake batter. I'm pretty sure it'll be a huge hit at any holiday party you through. Enjoy!
    Butterbeer
    • 3 pints or 1.5 liters Real Ale
    • 1 inch fresh grated ginger
    • half a teaspoon grated nutmeg
    • 6 cloves
    • Heat to Low Simmer
    • In separate bowl beat together:
    • 1 cup or 225 grams demerara sugar
    • 5 egg yolks
    •combine with ale mixture
    • melt in 4 oz. or 100 grams of butter
    • serve in a mug and garnish with nutmeg

      Oh hey, I have learned there IS a reason to use dried over fresh ginger. Fresh ginger has more of a biting, tingling, bright flavor, while dried ginger converts alot of those flavors into a sort of burning hot taste. Experiment! make ginger tea with both.

    in the UK drinking with friends is pretty normal from the age of like 15 so it may seem weird to americans but them drinking real alcohol in the books isn't too odd

      It doesn't seem weird to us, real Americans hate the stupid drinking age law. You can go join the military and vote at 18 but can't drink or smoke... tsk... but most states allow kids to drink on family property at 16 under adult supervision

      Well to be fair the legal age and drinking age differ everwhere. In germany drinking is allowed from the age of 18 but people usually have their first hangover with 14. Literally not a si gle person i know did not drink alcohol before they were legally allowed to do so

      Yes it is. The drinking age in the UK is 18 (and in the wizarding world it's 17). So anyone drinking below that is breaking the law. You certainly couldn't buy alcohol in a pub without ID that proves your age.

    No one will probably see this but, I tried to figure out how I would make a single serving of this drink and came up with the following recipe. 12 oz. of ale , with just a dash of dried clove powder, ginger powder, and nutmeg. Let it come to a very low simmer in a sauce pan, hint taste as you go to see how much spice to add, you don't need much with these ingredients! While waiting for your beer to warm up take two egg yolk and mix them with 1/4 cup of demerara or light brown sugar if you don't have access to demerara. Beat the yolks in with the sugar until it is white in color. Then take a ladle and slowly while mixing if possible, temper your egg sugar mixture by adding a little bit of beer at a time, once that mixture is tempered, add it to the rest of your beer, depending on the head of the beer you may need to whisk it a bit vigorously to achieve a serious froth. Finally while its still warm melt 1oz. of butter and pour into a large mug. Note, some experimentation has also been done with porter, and I found it to be good as well, though not very frothy.

      @@heama he actually only used the yokes not the whites in this recipe, I'd honestly be interested in seeing if there would be of beating the whites and folding them into the beer. if you used the whites instead let me know how it turned out

      @@lilporky8565 I used a standard American 12 Oz bottle and the amount of beer foam will depend on your pour. You will end up with more than 12 Oz obviously since you will be adding a considerable amount of sugar and egg.

    I was so excited to taste Butterbeer when I found a bottle on sale, too bad that the official one is basically like drinking sparkling syrup. This is closer to what I always pictured the drink to be: a creamy, hot and slightly spicy beverage, almost like a mix between eggnog and a cappuccino. I'm totally gonna try this recipe one day

    I actually had a friend who worked in Orlando’s Universal Studios!
    If you want to make a frozen butter beer as they make ‘em in the theme park:
    1) You’ll want a bottle of Cream Soda
    2) Blend it LIGHTLY with crushed ice
    3) in a separate bowl you’ll want a decent amount of whipped cream (about a four second squirt)
    4) lightly mix in caramel syrup into the whipped cream and adjust to a light caramel taste
    5) Pour in your soda cream slush and top with caramel cream topping
    I kid you not, this is exactly how they do it and it is surprising easy to make. Plus, most households have whipped cream, caramel syrup, and ice! All ya need is the cream soda and you’ll be in for a treat 😁

    Just found this, wanted a good recipe using actual beer (not that super sweet butterscotch-y soda) to drink while playing the new Hogwarts game- this came out great!! Followed directions exactly, except used ground ginger (1.5 tsp) and ground nutmeg. Will be making again!!! 🍺

    A tip on ginger use: peel it with a vegetable peeler, tightly wrap it in plastic wrap, freeze it, and *then* grate it: it turns into an almost ginger snow that dissolves super fast and is significantly easier to grate as the fibers don't come apart.

    Late to the show but just tried this recipe tonight and oh my goodness if it isn't one of the best warm drinks out there. As explained in the video the spices blend into the beer and goes to the background while the creaminess gets boosted! Definitely a recommended drinks for those cold winter days!

      Yes he is very good at being entertaining. you could always try it as beer batter. Just scale down the ratios and only use one pint of Ale then add some flour. As he mentioned fish and chips made with this would probably be really freaking good.
      But if you wanted to avoid the alcohol entirely a good strong Ginger soda would probably work. The biggest reason for putting beer into batter is the carbonation. Makes for crispy breading.

    You would use ground ginger opposed to fresh because ground versus fresh ginger undergoes significant flavor changes on a chemical level that will carry through to the final product/drink/recipe. Yes, ginger is a tropical plant and resultantly does not grow well in England, but the chemistry is why I would side with using the dried ginger or else risk changing the flavor profile significantly. There are some good youtube videos on ginger specifically and these changes it undergoes through various processes, including simple dehydration.

    If anyone wants to know the (estimated) ABV for this, I've tried to figure it out myself.
    (edit) It's 4.74% if you don't care about math, but if you do, read more.
    First, I found the estimated weight of the final drink:
    Weight of the ale: (alcohol is on average 5% denser than water) Samuel Smith Winter Welcome Ale is 550 ml per bottle 550 * 1.05 = 577.5 3 * 577.5=1732.5
    Total volume of ale is a little more than 1.5 liters, I want this to be as accurate as possible.
    1650 mL of ale = 1732.5 grams ale

    Half teaspoon of nutmeg = 2.46 mL (density of nutmeg is around .89 g/mL) roughly 2.19 grams of nutmeg
    Weight of cloves varies greatly, but from multiple sources, I'll put the grams at an average of 5g per piece. 6 cloves * 5g = 30 grams of cloves
    sugar (easy) = 225 grams sugar
    egg yolks weigh on average 20 g each, 5 egg yolks = 5 * 20 = 100 grams egg yolks
    finally, butter (easy) = 100 grams butter
    Estimated total weight of finished product: 2,191.43 grams.
    Then, I found the alcohol weight in the ale alone:
    Alcohol by volume of the ale = 6.00 %
    Therefore, the alcohol weight of the total 1732.5 grams of ale is 1732.5 * 0.06 = 103.95
    Total alcohol weight in final drink 103.95 grams
    ESTIMATED ABV OF FINAL DRINK = 103.95 / 2191.43 = 4.74
    4.74 % alcohol by volume, still within average range of ABV of beer.
    I didn't account for any of the ingredients burning off during preparation or that spill at 7:53 :) but I think this is as accurate of an estimate I could find given the data I could find and the ingredients in the video.

Vapour pressure of alcohol, area of the free boundaries of the mixture, energy use in the heating, time of heating and interaction between water and alcohol are factors that should be considered for the estimation of the alcohol lost (in reality many more ). My guess is that the real alcohol percentage is about 1.5, 2% by volume

    just tried making this for the first time. Came out differently then yours. a lot of people seemed to describe yours as "french toast" mine was more "gingerbread". used a little extra ginger and i only had brown sugar on hand. still got compliments. Might next go round will be using a pale ale, raw cane sugar (no molasses), less ginger, and maybe that 6th egg you mentioned

    I will be trying this. But here in my home state of Washington there is a Brewery located in Leavenworth called the Icicle brewery and they make this insanely delicious Ale called Dark Persuasion and it is a German Chocolate Cake ale so i will have to try making a batch of butter beer with that....... Sooooo excited

    Just made your recipe and damn it's good! We halved it because it's just my wife and I. We like our drinks only SLIGHTLY sweeter so we added about 2 tbs of brown sugar and a dash of cinnimon to the hot beer mix. We used ground ginger since we didn't have real ginger and our local store was out of Samual Smith but they had Sam Adams winter lager. It obviously wasn't exactly your recipe but pretty close. My wife isn't a big beer drinker and she loved it. Thanks for the awesome video and the recipe :)
