    I've eaten SO MANY vegetables the last 2 days since starting to watch your videos, and I've dropped 1.5 lbs! I'm already pretty small, but I had put on 7 lbs during my last trip, eating absolute JUNK the entire time because we were hiking and camping and it was almost impossible to do anything but pack with anything but lightweight processed garbage. I only have 1 more lb left to lose to be back to my pre-trip weight from 2 weeks ago - WOOOOO!!

    Thank you chef Aj, I’m so inspired by you, I’m in my 50’s and weight loss is a super slow process, When I was in my teens , 20’s and 30 ‘s I could always lose weight at the drop of a hat, but I couldn’t keep it off! In my 40’s took forever to lose weight and now 50’s losing weight for me is nearly impossible, I love veggies cooking in butter or oil, but now without butter, oil or salt, I hate veggies, but with this video I think I can enjoy veggies this way, I became a vegan a couple of months ago, but I would really like to lose some more weight, I really like your positivity and your advice and also at your age it gives me hope that perhaps I too can lose weight and keep it off for life!     Thank you....the brussel sprouts tasted like a dessert! Only 150 calories of reduced balsamic helped me easily eat an entire 1 lb. bag of sprouts.

    My Dr. had me on anti-depressants for 10years, I successfully got down the dosage but the last 37.5 Mg. I thought I was going mad! It was so hard, i had to stay away from people for 3 weeks!

    I use my Instant Pot every day! Thanks AJ. Very rarely use my Air Fryer anymore. I like the quantity you can cook in the Instant Pot since there are 3 of us here.

    A local restaurant used to make a carrot top pesto. It was delish but had olive oil and sunflower seeds so fat was high even though vegan.

    Absolutely It is a mindset. People can eat a whole pint of ice cream and a whole packet of Oreo cookies shooting up to 1200 calories in one sitting, but when people see a giant salad or a giant serving of Brussels, they think they can't eat it because they are programmed.

    Brilliant and inspiring video, Chef AJ! You have so much energy! I watched your Johnny Carson video, hilarious! My favorite vegetable is a mixed of roasted vegetables, but I love the carrots most. Thanks for the cookbook recommendations. I don’t have an instant pot or air fryer yet, but I’m working on it. 🥕🍠🍓You really brought home the fact that if you’re not hungry to eat vegetables, you are experiencing emotional hunger. So true! Last night I wanted “something crunchy” so I ate dry cereal. Case in point! Thanks for bringing that to my attention!

    Thanks for the inspiration on how to prepare vegetables in a tasty and easy way. I receive a tonne of home grown veggies from my parents' garden, and now have much better ideas on how to prepare and consume the volume of food that is crowding my fridge. I ate zucchini (roasted in the oven the night before) before my breakfast oats this morning. That was the very first time I have done that in my life! I am going to try your mushroom & kale saute next. Thanks sooooo much for these informative videos. The energy you exude speaks to how healthy you are from eating this way. There is no more powerful message than practicing what you preach.

    Been eating plant based,,no oil,no sugar ,no salt, everything right and I gained weight. No nuts either. What am I doing wrong.. I have eaten enough also I love eating veg and fruit.       CHEF AJ thank you I ate healthy prior to this journey. I do not eat flour, junk , fast food A glass of wine here or there. Never ate rice or kidney beans No fast food. My day consists of rolled oats, fruit, coffee with HALF AND HALF bad. Lunch beans and rice , fruit. Dinner was roasted veggie , zucchini . My evening snack was puffed rice and almond milk. I thought the puffed rice was the problem and I switched to frozen mango with almond milk. I followed the plan except the half and half in coffee in the morning. I feel it’s portion control. More I hear the portion should not be the problem. Thank you for the link. I am truly discouraged and still gaining fat , weight. How would I know. The scale is going up, that’s all I know. I do eat after 8 pm ? Maybe that’s the issue. Wine ?

I'm now in a healthy range for my weight but i still have another 16lbs i still wanna try to lose to stay healthy.     I think you are onto something with eating vegetables for breakfast. I love veggies, but normally don't eat enough of them. I'm trying to go vegan ( I find dairy to be the main issue) and so I came across your videos. I made a tofu scramble with 2 cups of kale, a red pepper, some onion and garlic this morning and it was both satisfying and filling. I have recently discovered smoothie bowls, thanks to other vegan youtubers and while I love them, I don't do well with sweet things in the morning. Thank you for your insight and your videos. I wouldn't have thought about making veggies my main go-to breakfast, but I definitely see the benefits.

    If you have an overhead exhaust above your oven, turn it on full blast and chop your onions/shallots under that, it will suck the sulphur out and away. If that's not an option, chew gum and/or try breathing with your mouth instead of your nose.

    My grandma suffered her entire life. A hysterectomy after her second child at the age of 23 she would suffer a 50 year battle loosing more and more of her intestine over time. Her willpower diminished by the end of her life, because of a surgery she no longer required the same amount of OxyContin; so the rehab she was recovering in timed her medications and that was the beginning of the fast descend. I saw how her eyes were in a vacant haze, she wasn’t interested in anything my family or I had to say, constantly standing and sitting, never comfortable, could not relax, she was having withdrawals. Instead of living she decided to stop eating and her life came to end 2 months later. Chef Aj reminds me so much of her, she was a take no crap Red Foreman type of lady. I want to live as long as humanly possible. Im going 2 days strong only eating recipes on this channel... Its super easy because I love veggies , except I haven’t eating dinner with my boyfriend or mom yet. They love to go out and get food even more so now because of Covid-19. Im giving it my all! Wish me luck!

    If I go to bed hungry I don't fall asleep or I sleep restlessly. I'll dream of food and wake up several times throughout the night, then feel almost sick the next day. I personally would rather have some digestive issues now and then than feel like I might sleep walk to the fridge or eat mindlessly the next time I spot food.

    Brilliant I'm so glad that there are more vegan people around cooking healthy vegan food. Thank you for all this wonderful information. This is exactly what I've been looking for! I have a question, how can I flavour food without onions and garlic or any vegetable of the allium family as I am totally allergic to them, they make me feel ill and I don't like them either.

    Thank you for this interesting video. I am new to this concept, having lived forever being told that starches were bad for you and promoted weight gain. I love potatoes, I love brown and white rice, I love certain vegetables (I believe I am a mushroom-aholic) and enjoy many different types. I do like to snack, but now I snack on baby carrots, raw zucchini, cukes and the like. Is it an issue to snack on raw veggies?

    I just found your channel and beginning my weight loss journey with a plant based diet. I have watched several other channels but I resonate more with yours. I believe we are the same age as well. You were 57 four years ago, and I am currently 61, and my birthday is at the end of March. Question: Are all of these meal ideas in any of your books or in your website?     I absolutely agree that people don't incorporate enough plants into their diet. But day one of eating massive quantities of vegetables has resulted in a headache and I'm starving. What am I missing???

      Sounds like you're missing starch, including rice, potatoes, and beans/legumes

    oooh I'm gonna try the pineapple and kale. I don't crave veggies in the morning but I need to try this. BTW I saw your Brussels sprouts recipe on one of your previous webinars and they're THE best. Even my husband loves them. Do you have a favorite way to eat asparagus?
    PS: I always watch these on CZcams because unfortunately I'm working all day. So thank you for sharing these!!!

    AJ you are so good with what you are doing. I can see how you motivate people to eat vegetables. You can also just how to cook tasty meals but you are doing so good to the world by telling them to eat healthy. Recently I became intolerant to vinegars and red chillies ( in fact all chillie powders) including black pepper as I used too much red chillies in my food that affected my stomach lining. Can you please suggest how I can add flavour to the food without vinegar and chillies. Thanks in advance.
