Boterkoek / Butter Cake

    1 cup butter, softened
    1 cup sugar
    1 tsp almond extract
    1 egg (save a bit of egg to brush on top)
    2 cups
    Mix very well together.
    Press into a 9" round pan.
    Brush egg on top. If you forget to save egg for the top, you can use a bit of milk instead.
    Double recipe for two 9" round pans. (30-35 minutes)
    Triple recipe to fit in a 12" X 17" X 1" cookie sheet. (25 minutes)
    Bake at 350 degrees.

    Hi Karen, Thanks so much for sharing your recipe. What type of flour? All purpose or self-rising.

      All purpose flour. No need for a rising agent. You want this to be 'dense' but don't over bake so it stays 'moist'.
