I make tons of these every year. I suggest you replace that glass thermometer with a metal candy thermometer. I owned the exact one you are using and it shattered when I let my oil get too hot to thermometer max measuring capacity.
I tried twice with a different mixture but as soon as I put it in the mixture it's like they cook there and when I put it there is no way, I tried less time but it was a failure, what a shame

I actually have a vintage metal thermometer. Just didn't grab it for this batch.
