Thank you for the compliment. If you do make a stock from vegetable's don't use potatoes. Usually celery, carrots, leeks and onions. You could add herbs of your choice. Any bones from fish, chicken, beef etc add those to the stock pot. You're making what most people would throw out a really tasty stock which makes success, soups, gravy and more. If you don't use it all pour any into an ice tray and freeze until you need it. Saves money buying stock cubes full of salt too. Bon appetite!

I freeze both celery and onions. It’s just a great time saver, and eliminates the messy part of making soup or stews. Rather than compost the leaves and stems pierces that are not perfect, I wash then freeze them separately to throw in the pot with making bone broth. They still have all that great flavor. I don’t blanch and it’s works just fine.

You said...Waste Not..Want Not....I cut off the bottom section of the celery... ..a bit more than you did....place it in a glass with a bit of water....change the water regularly...roots will shoot...plant the bulb...cut off stalks when thin and tender..they are sweet at this stage...do not remove the bulb from the soil as it keeps on growing more stalks... Really informative, as all your videos are, Kevin. I never knew why one was expected to blanch vegetables before putting them into the freezer. Now I know, so thank you for that. I usually get round the left over celery when making a stew. I just throw a whole head of the vegetable in each time. I love it anyway but your freezing technique will be good because sometimes I want to make a stew but don't have celery to hand. This way I will. Thank you again!

I Buy celery to freeze and I freeze chopped onions 🧅 , carrots🥕 , broccoli 🥦 cabbage for soups, and other things. I take the scraps and freeze them if they are in good condition for making broth. I keep a 2 gallon bag in freezer to add scraps to for making broth.
Apart from using celery in my Chicken & Dumplings, I love using the leaves more as I have found out that it gives the Chowder a tremendously amount of flavor, uggg makes my mouth water. Thanks for showing how to freeze it.
Oh please don't throw away the celery leaves they are the best part! Chop them up and put them in a lettuce salad, it adds so much flavor.

Put the wilted celery in cold water and refrigerate it. It will firm/crisp it right back up.

If you do need to keep fresh celery in your frig, just tightly wrap it in foil,it will keep for several weeks,fresh and crisp

I've never discarded the celery leaves. I've always minced them and used for flavoring chicken stock and soups, or added it to stuffing/dressing.
What a great tip, especially using the towels to make transferring the frozen celery to your Pyrex!
Celery leaves are nice on a cheese plate. I make stock with odd bits of celery. Great tips here.

Hi Kevin. Great tip. I do a lot of freezing, but I make small or medium size portions and vacuum seal them. Saves a lot of space and lasts longer.
