  • What dish describes a chef's roots? For chef Serigne Mbaye of Dakar Nola, it's the thieboudienne of his native Senegal. The New Orleans-based chef grew up loving his mom's Senegalese recipes. Now Mbaye now recreates those childhood favorites at his pop-up Dakar Nola, the first restaurant from the 28-year-old chef. Mbaye's thieboudienne, which combines fish, rice, vegetables, and tomato sauce for a warm and savory meal, "tells the story of where I’m from and shows how the dish evolved throughout the years.”
