Rohan Joshi's Recipe:
Ingredients
--For Pickle Veggies
½ cup Carrot
½ cup Japanese Cucumber
3 tbsp Mitzukan Vinegar
1 tbsp Sugar
--For Sushi Rice
2 cup Cooked Koshihikari Rice
¼ cup Mitzukan Vinegar
--For Vinegar Water
1 cup Water
1 tbsp Mitzukan Vinegar
--For Wasabi Paste
2 tsp Wasabi Powder
1 tsp Mitzukan Vinegar
--For Sushi Assembly
Nori Sheets
Sushi Rice
Vinegar Water
Pickled Veggies
Black Sesame Seeds,
White Sesame Seeds,
Smoked Salmon
Sushi ginger
Soya sauce
Wasabi Paste
Method
1. Cook rice in a rice cooker. Once the rice is cooked add Mitzukan vinegar and mix well.
2. For pickled veggies, cut the veggies into Baton and cover it with vinegar and sugar solution. Keep aside for 30 minutes.
3. For vinegar water mix vinegar and water together.
4. For wasabi paste, mix wasabi and vinegar.
5. Take a sushi mat place the nori sheet over it sprinkle sesame seeds. Dip hand into vinegar water, take rice portion, place it over the nori sheet, and flatten it. Place the thin slice of salmon and pickled veggies rolled out tightly and cut into a 1-inch disc.
6. Serve with wasabi paste, soya sauce, sushi ginger, pickled veggies.

May I give 1 tip for making Sushi rice, Sir!? ( maybe for your viewers)
We normally use handy fan, called Uchiwa, to cool the rice while mixing rice with seasoned vinegar.
If you don’t have a handy fan, you can use a thin magazine or clip board and just flip-flap it over the Sushi rice to send cool air!
Oh, 1 more tip is here!
While cutting Sushi roll, if your knife gets sticky, it normally does, you can wipe your knife with a cloth applied with some vinegar!
Then you can cut Sushi roll beautifully till the end!
