    Letter of Life in Mashiko ~Early Summer, Rainy Season
    This is the fourth time I have visited Yoshie-san's house.
    Yoshie's garden always amazes me with the different scenery that changes with the seasons.
    The moist humidity and gentle breeze was pleasant.
    This time, she taught us dishes we would like to eat during the coming hot season.
    Ratatouille made with fresh summer vegetables is refreshing and full of nutrients.
    It is also recommended during the summer heat.
    All of the recipes are really delicious and I have made many of them at home!

    ▽Ratatouille▽
    Ratatouille is a stew made with just olive oil and vegetable water.
    It can be served warm or cold.
    It tastes even better if you let it sit overnight, like a curry.
    It is recommended to make a large amount and serve with cold pasta the next day.
    【Ingredients (5-6 servings)】
    1 onion (2-3 cm square)
    200 g each red and yellow peppers (remove stems and seeds, and cut into 2-3 cm cubes)
    500 g eggplant (cut into thick round slices)
    500g zucchini (cut into small pieces)
    500 g tomatoes, cut into small cubes * Canned whole tomatoes can be used (crushed by hand)
    2 handfuls garlic, crushed
    2 small red pepper
    salt to taste
    Olive oil to taste
    【How to cook】
    (1) Heat a pan and saute eggplant and zucchini in a large amount of olive oil.
    (2) Once the vegetables are coated with oil, add a pinch of salt and sauté slowly until the cut edges start to brown.
    When the vegetables have finished frying, remove them to a separate plate.
    In the same pan, add olive oil, garlic, red pepper, onion and sprinkle salt.
    Sprinkle salt and saute over medium heat.
    When the oil has turned, add the green pepper, sprinkle with salt, and saute well until the green pepper is crispy. 
    Add the tomatoes and saute until the tomatoes break down.
    Add the eggplant and zucchini, mix, remove the red pepper and cook for about 10 minutes to let the water evaporate.
    Taste the tomatoes and adjust the seasoning. If not enough, add salt.
    If you are making cold pasta, choose thin pasta.
    Boil the pasta thoroughly according to the directions, and then put it in ice water.
    Make sure to keep the pasta moist.

    ▽Cold corn potage▽
    【Ingredients for 2 servings】
    2 large ears of corn (300 g of corn grains only)
    2 teaspoons light brown sugar
    1/2 teaspoon salt
    Water to taste
    1 tablespoon fresh cream
    【How to cook】
    1) Remove the husks and boil the corn for about 1 minute. In case of microwave oven, heat for 4 minutes.
    Scrape off the corn kernels with a knife.
    (3) Mix the grains with a blender.
    (4) Add water or milk to the mixer to make the desired consistency.
    ⑤ If the taste is not enough, add salt and sugar to taste.
    ⑥ Finally, strain the mixture through a strainer and add the cream.
    (You can use a colander instead of a strainer.
    7) Chill well and enjoy.

    ▽Lotus root and wakame seaweed with yogurt▽
    【Ingredients】
    5-6 cm lotus root (cut lengthwise into quarters and thinly sliced)
    Wakame seaweed, as needed (this time, use salted wakame seaweed. (In this case, salted wakame seaweed, and rehydrate it in water)
    Fresh, salted, dried, or whatever you like.
    A few beans (boiled)
    A pinch of salt
    2 tablespoons of light brown sugar
    [For the dressing]
    4 large yogurt, drained (unsweetened yogurt, drained beforehand) Drain off the water before use) 4 large
    1 large portion of mayonnaise
    4 large sesame seeds
    A pinch of soy sauce
    【How to cook】
    1) Put sliced lotus root in a pan and pour vinegar into the pan.
    Add sugar and salt and heat.
    When it comes to a boil, lower the heat and simmer for 30 seconds.
    (3) Turn off the heat and leave the lotus root soaked in the sweet vinegar to cool.
    4) Mix all the ingredients for the dressing.
    Taste and adjust to your liking with soy sauce or mayonnaise.
    5) Dress lotus root, wakame seaweed and fava beans.
