I think that's why she has covered with lid during its cooking so nutrients will stay and not evaporate and will cook faster. Moreover, the water released by palak will be absorbed by aloo making the cooking process more efficient.
I am not good at cooking but looking at video. I think cooking spinach and potatoes same time will overcook spinach with no nutrition. We should cook potatoes first then spinach.

If you cook palak with potatoes at the same time your palak will over cooked and nutritions will be finish.
