Excellent job, works great on the Thanksgiving bird as well. I always loosened the skin with a butter knife and put some seasoning between the skin and the meat adds extra flavor

I've done this with cournish game hens. Works great and simple to follow the backbone. Read the term is english. Definitely wanna try on something like a chicken and do over campfire.

How'd that skin turn out? Poultry has always been my toughest item, but I've recently down pretty well with wings, and a beer can chicken that I rubbed with a little added corn starch.

Go ahead and remove the wishbone and the ribs too, while it’s open. A little bit more work but it makes it so much easier when eating and carving.
