For your first time that’s pretty good! It took me about 7-8hrs to do this style. The speed comes with time and also the persons hair thickness can also make the time longer too. Ur not alone!

You can use the shine ‘n jam (shown at the beginning of the video) to define the curls.. I use that sometimes instead of mousse

Mousse for synthetic curls is the worst…oil is a better option.

Mousse and braiding up the curls in large sections like you said will definitely keep them from tangling
Definitely not every day..
Probably as and when required....consider product build-up
Can I use leave in conditioner + water on synthetic hair as well?
You could but mouse is better cause it’s lightweight. The conditioner and water will tangle the synthetic hair faster
