Why shoot deer?
This is the story in the UK - it’s similar to Ireland.
There are more than two million red, roe, fallow, sika, muntjac and Chinese water deer in Britain’s countryside and semi-urban areas, the highest level for 1,000 years. Numbers have doubled since 1999, according to the Deer Initiative, the UK government’s deer agency.
Deer are an attractive and an important part of our wildlife. However, they have no natural predator in the UK so numbers must be sensibly and strategically managed to keep them in balance with their habitat and to prevent damage to crops, trees, woodland flora, gardens and other wildlife.
Deer cause £4.5 million-worth (Forestry Commission Scotland) of damage to plantations and other commercial woodlands in Scotland. Crop damage is estimated at £4.3m a year according to DEFRA, with the greatest damage on cereal crops in east and south-west England.
More than 8,000 hectares (Parliamentary Office for Science and Technology) of woodland with SSI status is currently in ‘unfavourable’ or ‘recovering’ condition due to deer impacts such as browsing and fraying. Deer can also influence the variety of wildlife in woodlands and other habitats by altering structural and plant species diversity. According to the University of East Anglia’s Dr Paul Dolman, that has resulted in a 50% decline in woodland bird numbers where deer are present, impacting particularly on nightingales, blackcaps, chiffchaffs and warblers.
Deer are susceptible to Bovine TB and may be responsible for the transmission of TB to cattle. They are also the likely driver behind the UK’s increasing tick population (Scharlemann et al 2008).
Happily, venison is a delicious meat. It is wild, natural and free range, and - almost fat-free - it is one of the healthiest meats available today. Results from research commissioned by the Game-to-Eat campaign (Leatherhead Food International Research 2006) suggest that there are real health benefits to eating game. Venison is high in protein, low in saturated fatty acids and contains higher levels of iron than any other red meat.
Been cutting professionally and now in my own hooby shop doing deer, bear, moose..etc. for 50 years now. Always enjoy looking at videos and learning new little tricks of the trade. You do a hell of a job cutting and a fantastic job explaining why you do what you do. Thank you...even this old dog learned a few new tricks!!

1st class..so enjoyable to watch a professional at work and John's quiet personality added greatly to the experience! And...I'm from Kentucky so his accent is also very cool! I have processed many deer in my life but I still learned some things I will use next time, in particular his skinning method. The 2 main differences in my processing is that I de-bone the deer while hanging (except the shoulders)including the hams and when processing I separate the hams into the four muscle groups we call the top round, bottom round, eye of round and sirloin and make steaks or roasts. But I will say again it was a joy to watch you John! And thanks for the excellent videography!

Thank you for sharing your video. This is by far one of the best tutorials on butchering a deer. You made this look so easy to accomplish. I'm new to this sport and want to learn how to properly make different cuts. Now to find a good set of knives.

I really enjoyed watching this... all the years, I have pulled the fur off from the rear towards the front. I think it is because I was taught to hang the medium game by the rear legs, based on the thought, the rear legs are stronger and will not pull through hanger/hooks... and what a pain in the booty it has been... Now seeing that the front legs will support the weight just fine, and to see the skin peal right back, cleanly.... I am blown away... Thank you both, very much...

Fantastic setup. Much of the work involved with butchering your own is converting a space usually used for something else into a clean functional place to do it and also to clean it up afterward.

Very nice to see someone who knows what he's doing. Butchered a few deer and I got some good pointers from this video on how to do it a bit better. Also agree on the hunting for the table bit, compared to eating industrial meat.

Love how he says not to overcook the venison. Here in the US overcooking venison is a common reason people dislike it.
Part of that problem is the women here in the US are spoiled. They don't like rare meat because they've been brain washed into thinking if it's not cooked through it will make you sick. As if they eating chicken. But I've seen then eat ground beef not cooked through. Which is just as dangerous as eating uncooked chicken. Never the less this untrue fenominon continues to be passed down from generation to generation.

I've been watching Scott Rae for a while now. He is definitely a cut above most I've seen. This gents I would also classify as a cut above. One of the things I struggle with is the amount of waste I'm producing trying to remove silver skin, tendons and fat. I've always been told remove all the silver skin and fat. Doing this just produces an enormous amount of waste. I assume the deer anatomy here in the states is similar if not the same. Just a larger animal. I grind 90% of my deer into straight ground deer. Tenders, back straps and neck are removed intact. Smoked sausage with 30% wild hog and breakfast sausage 50/50. I would hope one of you could give a bit of guidance on how much of the silver skin tendons and fat need to be removed prior to grinding

This was a pleasure to watch and I'll watch it again before my next hunt. There's some stuff here to consider as I dress and skin the deer. He makes it look easy but the butcher is reasonably priced, makes me appreciate them all the more.

You were amazing to watch! It was nice to see a video on how to butcher properly. I'd like to see the process in a little more detail from the time it's shot and the time it takes you to get it to your home without the meat going bad.
