I love me some brats. I actually crave them during summer. Just grilled some up a few days ago and there's one more left in the fridge. Charcoal grill is the way to get the most out of this particular sausage. I hate breakfast links. I only eat brats and Italian.

I'm always looking for flavorful sausage but unfortunately there are none available out west I can pick up Papa Cantella's Mild Italian Link Sausage 4 Ounce for $1.25 a link but they have no flavor. I really miss a good Italian sausage like they serve at Johnnie's on North Avenue in Elmwood Park
BTW if you do not want to know how they make sausage stay away from Upton Sinclair's book The Jungle about the stockyards in Chicago at the turn of the 20th century
