Hi! Both are grammatical. In order to choose whether THIS or THESE should be used in the sentence, you and the listener/reader should both understand which subject is being referred to (if it's singular or plural), or there should be a preceding statement that identifies the subject. "All of this" is used with singular nouns, uncountable nouns, or multiple individual objects that are referred to collectively. "All of these" is, of course, used with plural nouns.
