Just wondering, did you pull any membrane off the back of the ribs before cooking?
I just got some from my butcher, in UK, but they were individual ribs, not racks, so I'm just going to rub and cook, but might try it on a rack over my firepit
Yes, you pull it off
Yeah mate pulling the membrane off is the best thing you can do. Allows flavour to penetrative and stops the rib from raising

I’m almost 50, born and raised in New York City now living in Los Angeles and I’ve been eating lamb since I was a kid. And god I LOVE IT!!
