    INGREDIENTS
    1 tablespoon extra-virgin olive oil
    1 pound butternut squash (½ a small squash, sliced in half vertically), peeled and sliced into ¼-inch-thick half moons
    1/2 teaspoon freshly grated nutmeg
    1/8 to 1/4 teaspoons cayenne, depending on your penchant for spice
    Kosher salt, to taste
    Freshly ground black pepper, to taste
    12 ounces linguine pasta
    8 tablespoons (1 stick) salted butter
    1 cup walnuts, toasted until golden and coarsely chopped
    16 to 20 stems fresh sage, leaves plucked from stems

    I think I’d use a much wider noodle than spaghetti since those squash slices are so wide. Like I’m thinking more a fettuccine or tagliatelle.

    Delicious! In just made this with home grown black walnuts, butternut squash, and sage. I didn't have enough black walnuts, so I added some almonds. Both nuts taste good, but the almonds were amazing!

    I have bad memories of all pumpkin/squash and sweet potato after being made to eat it as a child. I have been able to avoid this for 50 years because here in Australia it can mostly be found as an accompaniment to a roast or as a soup. I think I am ready to try this now. The recipe looks delicious.

      Glass is way harder than stainless steel. I use induction cooktops, and they do not scratch easily. I can shake my pans and not even a slight scratch.

    What's a good fresh herb to sub for sage in this dish? I am unfortunately allergic to sage.

      Basil is sweet smelling and could work. I would fry it by itself until crisped and translucent. Do not mix in as it will shatter. Sprinkle the fried basil leaves on top when plating.

      @@tara_nguyen Thank goodness somebody mentioned this. I liked the dish and she was good showing and telling how to make it but god the long CV upfront and mentioning the pan every 30 seconds was so cringey.

    Too fussy with the butternut squash prep. Roast it on a sheet tray while prep for the other ingredients!

    8:47 You call that "al dente"? I haven't seen a spaghetto that lively (right most side of the pasta in the tongs) since The Great Pasta Overcooking Disaster of 1973! Go back and not only read the definition of "al dente," but also watch what they call "al dente" throughout Italy. MUCH stiffer, and for good reason.
