If sharpening knives, it is recommended to use 400 grit cbn grinding wheel, most woodworking tools 180 grit is more suitable.

For most knives 400 or 600 grit is most suitable, it is best to use 180 grit first, then use 600 grit

For knives, use two wheels - the 400 and 1000 (or 1200).
Also you can use 180 or 220 if you need to reprofile the bevel or fix a damaged edge quickly.
So for knives, you can buy 180, 400, 1000 (and mostly use only the two finer of them)
