- This week I wanted a cool but elegant dessert to serve after lunch in the garden so I'm sharing my recipe for crostata alla crema con frusta, a homemade pastry tart with a lemon and vanilla infused cream filling and homegrown fruit.

Every day I get so many emails and comments asking why you can’t locate the music I use or find it using Shazam. I purchase music licenses for almost all the music you hear in my videos. I buy them them from various royalty-free production music sites and most of the time they don’t list the performer because it’s music made only for film productions with an audio watermark throughout the entire track, unless you purchase the single-use license for $50-100 per track. I use a lot of opera so often I’ll reference the opera but I won’t be able to direct you to a recording of that specific performance that you could stream or buy on iTunes or Spotify. Hope that clears things up and thank you for appreciating quality music.

Oh, my gosh! That was so well narrated! Easy to understand! The conversion from grams is a bit hard but can be done. I make the lemon cream for St Joseph cream puffs. Gorgeous video! Love the crust recipe!!!

I used to work in a French restaurant where I made chocolate mousse pie. I exchanged some flour for cocoa, added vanilla and made the blind crust. Then added the chocolate mousse topped by whipped creme. I hadn't thought about this for many years. You are inspiring me to try it again. Hope I can remember and get it correct. Cheers.

The tarts look beautiful and I am sure tasted 😋. As well as making this tart I make an easy alternative for when time is tight, substituting the mascapone cream mix used in tiramisu, adding vanilla and orange zest for the crema patisserie. Sometimes adding orange zest to the pastry or using chocolate pastry, particularly delicious with raspberries.

I absolutely cracked up when you said, "If you don't have an amicable relationship with pastry ..." Mine was always like WWIII, ending in nuclear annihilation! Fortunately, there is now a perfectly serviceable refrigerated, rolled-out, ready to bake pastry dough available in the grocery stores, far better than anything I (or my mother) could make. If not for that, our thanksgiving pumpkin pie would be a pumpkin flan! (My motto is to never admit defeat, just rename the dish! I told my sister to call the messy edge on her piecrust "rustic" & her friends thought she was very European!) And what happened to that tiny squalling infant Gianfranco?? He is a plump, happy, pre-toddler trying out all the sounds he can make & exploring the world of fruit! Totally precious.
