RECIPE :
PUDDING MIX:
1 CUP SUGAR
1 CUP PLANTBASED MILK (WE USE UNSWEETENED ALMOND MILK)
1 TBSP CORNSTARCH (OPTIONAL)
2 CONTAINERS OF VEGAN CREAM CHEESE (WE USE SIMPLE TRUTH)
1 TBSP VANILLA EXTRACT
1 TSP NUTMEG
1 TSP CINNAMON
4-5 BANANAS
1 PACK OF LORNA DOONE COOKIES
WHIPPED CREAM :
2 CAN COCONUT MILK
1 CUP POWDER SUGAR (HIGHLY RECOMMENDED)
1 TBSP VANILLA EXTRACT...

Just made this today and it is SOO Good. Thank you so much for sharing! I have some few possible helpful tips if you all don’t mind me sharing. ☺️
1. if you use the cornstarch you can add about a 1 and a half tablespoons of cold water/nut milk to the table spoon of cornstarch in a small dipping bowl, mix with a fork until it’s blended and watery and then add to the stove mixture of milk and sugar so you could avoid mixing for a while trying to get the lumps out. (It still thickens)
2. I used the 8 oz Daiya Cream cheese, if you use that, then I suggest only using 1 container and a half 1 container and 3/4ths
3. I added about 2 tablespoons of banana extract just to give a hint of that banana pudding flavor

Try the reddie made whip cream (they make a coconut milk one) it will make it a tad bit easier! As a chef I mke the cokkies chopped on the side to sprinkle on top when serving so you get some crunch with the soft! Beautiful mother and daughter cooking!! We need more female chefs and bakers!!!
